Ma’am, thank you for this. We grow our own apricots. They taste far, far superior to any store bought apricots. I have found some very good apricots at farmers markets (Orange County, Ca.). This year, thanks to Covid-19, we weren’t able to share our crop with anyone. So we had more apricots than we could handle. I decided to make jam. I watched several instructional videos and decided to follow your recipe. I’m very glad I did. This jam is wonderful. However, because our apricots are homegrown they probably didn’t need so much sugar. I’ve never made jam before. My wife is very happy with me because I made this batch. I like making her happy. I once read that there’s an Armenian phrase, “Love is like apricots. It lasts for only two weeks.” It refers to the short time span that apricots are in season. I like that. Shnorhakalutyun.

You can grow great apricots in California! The problem is that supermarkets don't carry them because they go bad too quick and are too delicate.

absolutely true! I grew up in the middle of a Blenheim Apricot Orchard....pure heaven. The grower allowed us to go pick up the fallen fruit because it could not be shipped. They were as big as peaches! Spoiled me for all other apricots!

They offer Apricots at every store in California except the slower mini markets or in areas where not that many people shop...you can still have them shipped to your house.

I love apricot jam!! I learned from my mom to keep the seeds of any fruit when it comes to make the jam. The seeds will intense the flavor and give a nutty flavor to it !!!

The seeds from these apricots are pretty bitter, don't think it'll be a good idea to add them, but in Armenia , my mom used to make this same jam with seeds , as our apricot seeds are very sweet

Lalitha Soni I did that too with the Costco apricots that come in that “Egg carton” type fancy package. They were almost as big as peaches. It was great! I made it again with ordinary apricots and it was good, but not as good, more tart.

I’m in California and we have our own apricot tree in our yard. My family and I are Romanian and absolutely love making apricot jam every year. Our apricots are so tasty compared to store bought. Conventional apricot has lots of pesticide. Just place the apricots in warm water, add a table spoon of vinegar. Let it sit for 20 mins. Rinse it and then follow her instruction.

Just made some apricot jam today for the first time using your video and it was lovely. Will make a swiss roll out of it tomorrow. I keep the kernals and open them to get at the seed inside as it is a VERY powerful source of vitamin B17 which contains natural cyanide and has immensely powerful anti-cancer fighting properties. For such a long time Ive been eating the seeds and throwing away the fruit. Not any more :)

4yrs ago and no one has answered you for strawbry 3kilo fruit 2 kilo sugar 3 large grated green apples 2 tblspn lemon juce per kilo cook down till will set hard or leave it a little runny. apricot is same but no lemmon juice will overpower the apricot. can leave the apples out too if you want.

heghinajaan in my language persian we make something called torshi. it is mixed vegetables put in vinegar with garlic etc. most popular kind is made from eggplant. do you have such a recipe in armenian cuisine? if so can you post a recipe please? thank you!

We make torshi too. It's just pickles. Heghineh has a video on her channel for pickled vegetables. It's basically the same, only our torshi was pickled in vinegar brine and hers are fermented. Check out her videos, you'll find it.

I need some pro tips here if someone can help: 1. If I don't use sugar at all, can I still extract the juice out of the apricot by simply resting it for a couple of hours? If I can't, is there any substitution to sugar? 2. Is constantly stirring the pot while cooking necessary? 3. If I choose not to put in any sweetener, will it taste really bad or simply "taste like apricot". I think something would probably change during the cooking process to change the taste but I'm not so sure which direction it's about to go.

Sugar is preservative, without sugar jam will be tart and get spoiled very quickly, you’ll need to keep it in fridge . Try using natural agave nectar to give it some sweetness and make sure to refrigerate after it cools down , If you don’t stir it’ll stick to the bottom of your pot.
