Once again, "Top shelf, no dust" recipe. There are so many differences with ALL New Mexican recipes. From Southern to Northern Nuevo Mexico and I love them all. I'm getting closer to drafting up a cookbook of family recipes. Thanks again for all you do. Simon Que Si, keeping our traditions alive.

Loved your comment, and agree about how the recipes change even from one part of the state to the other, but they're all good. If you see my biscocho video, I even mention how Northern New Mexicans call them "biscochitos." That's so cool that you're putting together a cookbook. You should title it, "Simon que Sí." I would definitely order a copy. (Feel free to send a recipe you'd like me to try out.)

Hands down one of my favorite breakfast dishes that I like any time of day! I always have my eggs over medium and eat around the yolk so I can save it for last. I prefer my with red chile, but green is good too!

In Texas it is sometimes made with chorizo. The salsa usually has jalapenos instead of New Mexico green chilies. I have never met a dish of huevoes rancheros I did not love. ! 😊

My parents are from Santa Fe NM I love all the New Mexican recipes. I’m in NEW YORK and once a year wegmans market sells this chili for 3 days so I got mine I’m so happy. Thinking about getting more. I love your recipes

What you're doing on your channel is important. Here in Denver we have gone to many Mexican restaurants and they always serve the same sauce whether it be green or red. I think all the local restaurants buy the same sauce by the 5 gallon from purveyors like Nobel Sysco and Shamrock. When I cook I don't skimp on the flavor and if the sauce is too loose then I can remedy that. Learning to cook great dishes like what you show on your channel is much more satisfying..I hope people are inspired to cook more because of your example here..take care!

I’ve never l been tempted by guevos rancheros, but you’ve made them look so delicious, I think I’ll give them a try-as soon as I find some Hatch chilies. When are they in season? I plan on traveling to Texas in March, and might cross into NM to buy this chili I’ve heard so much about. By the way, Marci, do you have a cookbook with all your recipes? Back in the day, in ABQ, I could get a whole sack of Hatch chile, roasted, for 12 bucks. I can't afford the 50 buck or more these days. So I use the preprocessed stuff. And it's not that bad! My quick and easy huevos rancheros is to put a couple corn tortillas on a plate, throw a handful of grated cheese on and either some green chile (or my homemade red sauce--Barker's on the bag recipe) nuke it for 90 seconds and throw a couple eggs on top. Yumbo!

I honestly didn't even watch the whole thing but I know it's good. I trust your talent and I encourage your viewers to incorporate eggs and especially their yolks into any recipe for creaminess just like the famous Loco Moco here in Hawaii where eggs are placed on top of a hamburger patty which is on top of a pile of rice and then topped with a great beef gravy. But there are a thousand variations. Just be creative like this video and you can't go wrong!

I LOVE Loco Mocos! My husband introduced them to me years ago when we went to Hawaii. He went to school in Hilo when he was in his early 20's, so he was a great tour guide. Everything there was so good. I also had thee best hot malasadas and the best seafood & fruit I've ever had in my life! Truly, you live in paradise! (Which island are you on? And do you work in the food industry? I'm so curious after reading your comments.) Just last night, my daughter came over, and seeing what I had in the pantry, she made us steamed rice topped with fried eggs & Spam, and drizzled with sriracha. Yum!
