I had never heard of Blueberry Cornbread before in my life. And I'm from the South. I saw this on KZbin two days ago and kept watching the video over and over again. And this morning, I woke up and it was on my mind so I went immediately to the grocery store and bought blueberries. I had all the other ingredients. I made it this evening. (With a few alterations: instead of milk, I used half and half; because of my pan size I may have used more blueberries; and because of my oven temperature/cooking rate, I ended up covering it with aluminum foil for the last 5-7 minutes of baking time just so the top wouldn't get too brown.) Oh, and Natalie was right about the clumping when adding the melted butter and milk (or in my case half and half). It got very "clotty, but I knew it was just butter and would melt into the mixture when baking and I was right! OMG!! I gave some to my neighbors (with the homemade honey butter) and they could not stop eating it!!! It was delicious!!! Now I'm going to try different versions with different berries, savory vs. sweet, cheesy and spicy. I cannot wait to keep eating this delicious cornbread. It is AMAZING!!!!

My favorite cast iron handle cover is leather and made by Hide and Drink, and I found it on Amazon. Fits all the handles, forms a comfortable shape with use, and I have never lost my grip and dropped the pan. The silicone ones seem to get slippery when on a really hot handle, and they get too hot. My leather Hide and Drink pan handle cover has never gotten too hot.

I've made the Cast-Iron Baked Chicken a couple of times now and I've promoted it to my favorite recipes list. The first time I used my well-seasoned 10 inch skillet - not quite big enough. So, the second time I dragged out my neglected. oh so heavy 12 incher. After oiling it, heating it to 450, and cooking the chicken, that skillet is well seasoned now. There was, cough, some smoke involved. I did this recipe once with only pre-cut chicken breasts, which greatly reduced the prep time. But, since they were leaner there wasn't quite enough sauce. I think I'd add more butter if doing only breasts next time.

@@jamesjfisk4968 they're also known as chokeberries. Wildly grown in the heartland and Eastern US, but starting to reach the comercial market due to being very high in antioxidants. They're very tart though, so I wouldn't say they're enjoyable straight off bush. One of my best friends parents farms them so we get a lot whenever we help harvest and I put them into nearly everything blueberries are used in. Aronia berries make a freaking amazing wine and kombucha! But I just make pancakes, muffins, and smoothies usually.

I love Ashley's blueberry Cornbread idea, but I am Canadian, well from the Province of Quebec and we have 1000 different blueberry recipes here, so I must admit that I did not try it. Not Ashley's fault because some others ideas she has and I have tried are wonderful.
