Great video! Can you incubate JUST in the instant pot and pour into containers after it's done? can you use mason jars loose in the pot? how important is sterilizing the containers before you fill them? My favourite toppings are blueberries, or cinnamon, or bananas and maple syrup.

Hey Jennifer, I got Holley to respond to this for you. - R Hello Jennifer! Heck yes you can incubate loose in the pot, or in glass Mason jars. Any time you can avoid plastics is a good thing. It would be important to me to make sure the jars are sterilized, it will help the yogurt last longer and ensure you only have the good bacteria you want in there. Good call on the toppings, have you ever fried bananas in maple syrup? It is super great! - Holley

You are so lucky!!! Heck yeah you can! You may need to play with the amount to get the sauce as thick/thin as you want it.

I don’t understand. I did everything this video said and my coconut cream became extremely thin and watery after incubation. Idk what went wrong. Can you please say how many tablespoons of gelatin you used... ugh I feel like I just wasted yogurt starter and probiotics

Oh no! (And sorry I didn't see this right away) OK, if I don't have this totally right ill get Holley to answer, but if if it's not thick, its an issue with the gelatin. Stir it in, heat it up to get it doing its thing, and then when it cools it'll thicken. To be sure that the culture did it's thing, taste it. If it's sour: success! If not, maybe there was an issue with your starter/probiotic. For exact amounts, check out the website linked below the video.

This is great! Thank you. I'm on a quest to make a coconut yogurt that tastes like my beloved Coyo. Have you ever let it ferment in the IP liner itself? Also have you tried making it again without the starter but adding a few Tlbs of the yogurt you made prior?

Ohhh. Thanks for the comment. Yes I have made yogurt in the liner, it works great! But I haven't yet used existing culture to make more, maybe it's something I'll try this weekend. I don't see any reason why it wouldn't work as long as it isn't heated! Try it out and let us know! ☆H

I have watched the video through and have not found an amount of gelatin per 2 cans of coconut milk. Is Knox gelatin ok? Thanks

that's just not true. I make soy milk yogurt all the time in my insta pot, don't boil it and don't add gelatin. I warm it add the starter and turn it on. the probiotics have no problem thickening. I don't want to add ground pig bones (gelatin) to my yogurt. to each their own I guess. I do have a yogurt strainer so I turn it into greek yogurt. will have to try it with coconut yogurt

Hi Victoria, Thanks for watching! You're sort of right. I mean, yes, typically the bacteria/fermentation would thicken a dairy yogurt (and according to your comment, soy milk) without need of a thickener. Coconut milk doesn't end up working the same way. The bacteria is able to ferment it (you can tell from the taste), but the result is not a thick creamy yogurt. The gelatin is used to get the more classic consistency. If you are vegan or vegetarian or just have an issue with gelatin, you can try another thickening agent. And one interesting side note: gelatin actually isn't ground pig bones, though I'm sure there would be even more health benefits from that like calcium, phosphorus, magnesium, and potassium. Gelatin is made from boiling bones, joints, skin, and tendons which are rich in amino acids that are really good for your own skin, hair, and joints as well as your gut health. I'm not sure what vegan/vegetarian equivalents are, but if you know, please share.

Hi Lydia, You would need something else as a thickener. That is the role of the gelatin in this recipe. Although the cultures do breakdown the sugars in the coconut milk, it does not thicken the way dairy milk does. Does that make sense?

This seems hella complicated, but I would love to have a truly AIP yogurt, so once I get my pot, I'll be trying this one. Can you make flavored yogurts or do you have to add flavorings after the fact? Thanks for this visual tutorial!

You can add fruit at any time during the process, but it will give you a kombucca or fermented flavor if you add it early. And no raw honey until it's done incubating as it is antimicrobial. It is really easy after a couple goes, I promise. - H

Hi Catherine, Great question! No, the bacteria uses the sugars in the coconut milk. The reason for the gelatin is solely for consistency since the coconut milk doesn't thicken as much as dairy milk. Which maybe because there is less sugar in the coconut milk? Regardless, the role of the gelatin is to thicken the yogurt.

You need gelatin or some sort of thickener only to thicken the yogurt. The cultures will do their thing, but they don't thicken the coconut milk the same way, which is why we use the gelatin.

That recipe contains added sugar, so if you're ok with that. You also need to refrigerate it to thicken it - I don't think it gets to that nice thick Greek-style consistency though. Our method would do the same thing without the gelatin, but as soon as you take it out of the fridge it will start to go runny within minutes.

Hi Scott, that's totally up to you, how much you're eating, and how much Just Thrive you are trying to get into people. The Just Thrive Probiotic has no function in the making of the yogurt, we're using the yogurt as a vehicle for the Just Thrive.
