This is the easiest way to make homemade yogurt. Dump two ingredients into your instant pot and away you go!
1.5 liter Fairlife ultra pasteurized milk ( you can use whole milk or 2%)
1 small container (6oz) plain unsweetened yogurt WITH live cultures
Place milk and yogurt into the instant pot and whisk to incorporate. If you want sweet yogurt add a small can of sweetened condensed milk. Take sealing ring off the lid so that any flavors you have cooked with preciously will not flavor your yogurt. The instant pot does not get hot enough to seal, so no worries the sealing ring is off. place lid on top and twist to close. Push the yogurt button and set the timer for 8-10 hours. I usually do this at bed so that I can strain it in the morning. When the timer is done it will beep. Now you need to strain the yogurt. If you have a fine mesh strainer or colander, put a clean tea towel or cheesecloth inside the strainer. Place a larger bowl underneath to catch the whey. Pour the yogurt into the cheesecloth/tea towel lined strainer. Wrap with plastic wrap and place in fridge for 4-8 hours. The timer will count up instead of counting down. Dump the whey and then transfer the yogurt to a storage container. It will keep in the fridge for a few weeks. Make sure to save about 1/2 C yogurt for your next batch. You can put it in a baggie and freeze it. Enjoy by topping with fruit, granola or honey. Its also wonderful to bake with, or make your own tzatziki. The possibilities are endless.

I had been doing a long pasteurization process before but gave the “cold start” method a whirl with great success. I’m using a glass lid I got online instead of the pressurized one that solves the issue you were having. Thanks for sharing your cooking tips.

I just use a stoneware dinner plate as the lid. I've seen some people use a glass plate.
