Our favorite pub had to cancel their St Paddy's day celebrations due to COVID and I was so craving some of their colcannon to go with my corned beef and cabbage. Thanks for the video. I think simmering the scallions in the milk is a brilliant idea. Only thing missing for dinner now is a nice pint of Kilkenny Cream Ale.

We always ate kale raw in salads...with spinach this would be a breakfast I would cook with all the same ingredients....just prepared a little differently! Kale is good food.

Kale can make the milk slightly bitter. Don't advise doing it that way. Soften it in a little salted water, like collard or mustard greens. This will break down the bitterness. Drain the water after cooking and fold it into the potato mixture. Daria Allen wrote several classic cookbooks on traditional Irish cooking. Recommend checking out her instructions on colcannon and the related dish champ. Her cookbooks and the cooking school she founded caused the Irish food revolution of the last 40 years. Her daughter Rachel Allen has several popular cooking shows on food networks and the internet. You can also make this recipe with collard and/or mustard greens. Just adjust cooking times to make sure they're softened. If you already know how to make greens, no big deal.

christ almighty, this looked tasty!! my own recipe( maybe it was copied from somewhere) was a combination of mashed spuds, bacon or chunky peices of ham, cabbage and leeks. with a dollop of butter, salt and pepper.

My Parents were from Kerry,now when my Mom made this she usually mixed the Onions,Spuds&plenty of Butter together and then baked it for a few hrs(obviously not on to high a heat)and without sounding biased,I'm pretty confident it tasted better than this.She also used to stuff the Turkey at Christmas with the same,which also tasted great..This was more of a fancy "bubble&Sqeak"recipe ,but nicely presented to be fair..

i dont know where the sausage and egg idea came from my mother boiled a big pot of floury spuds on an open fire then mashed them with a wooden pounder adding chopped raw scallions pepper and salt piled it on 8 plates with a big plate homemade butter in middle of table and we would dig hole in middle and fill with the butter all 8 of us soon made short work of it

You need more potatoes in it. I know you're both Irish by your names and your subject matter but your accents sound more English. No insult intended. Where in Ireland are you from? I'm an American with only one non-Irish great-grandfather (a German Catholic). All my people are from Cork and Kerry so that is the accent I'm most familiar with (and a little Irish Gaelic too), and most of them left before 1930 as teens, so my knowledge of current accents is from relatives visiting, TV, radio, You Tube and a few recent Munster immigrants I know. Obviously, I am no expert on Irish regional accents so forgive me. Of course none of the leaders of your current government sound Irish to me, so Dublin accents are hard to identify. Anyway, thanks for the video. When I make colcannon I make it like champ, then shred and boil the shredded green curly kale in SALTED water (same as you) then fold it INTO the salt, mashed potato & cream/milk/butter mixture with the green/spring onions at the end. Subtle differences, but this is a technique recipe that also requires the good quality ingredients to be at its best.
