One of the last things I can remember my nana cooking for me is an eggplant sandwich. I did not like eggplant but I ate it. She was about 85 years old and I did not want to disappoint her. Well, it turns out I was wrong. I loved it. She never had the opportunity to make an eggplant sandwich for me again, but eggplant has become something I eat regularly combined with tomato sauce over pasta, in curries, and of course, as a sandwich.

Its very difficult to get quality eggplants, on most of them you see insect marks. But anyways, you want to cook the eggplant to a such a level that it melts in your mouth, like cream. Great video!!
