This is similar to “ Indian pudding “ … an early American , New England recipe… very time consuming, with molasses in the recipe, but oh so worth it !! Remember this from my childhood from trips to my mother’s family in Vt. … serve warm with vanilla ice cream !! Yumm !!

That was really TEDIOUS 😀.....LOOKS DELICIOUS! So my quick method for years and a big hit with family & friends. Mix the dry ingredients, Blend 2 Coconuts with warm water, add fresh ginger....pour the entire thing into the dry ingredients, add liquid spices, give it a good stirring, add melted butter, pour into a greased pan (make sure the liquid is 3 or four times more than the cornmeal....it will be moist and you will have a Lovely caramelized custard topping. The ginger and fiber from the coconut will give it a nice texture & flavor. Plus healthful benefits.

Nice recipe! I tried it and the pudding was delish. I did 2 cups cornmeal to 1.5 cup flour and threw in a little grated cassava. Next time, I will half the amount of flour to get a more cornmeal texture. Instead of boiling the cornmeal, I will also just warm the liquid and add the dry mix so it gets a little thick but doesn't require so much stirring! It's tough work to cook on stove because batter is much thicker than porridge.

Ive been looking for sometime, the best way I could make this pudding similarly as my grandmother in Jamaica. Ive tried following to the one from Grace Kitchens and though it came out great, yours seemed easier to follow and the end product was beautiful! Girl this looks good, never made it like this before, I make mine the other way. I prefer the sweet potatoe pudding though. When I make the slushy top I add a little shredded coconut on the top to make it crunchy. Looks delicious 😋

Looks delicious. In US I cook for half hr on stove top first then in oven - this method keep pudding moist. In JA the natural coconut milk can do it straight to oven and comes out moist

This cornmeal pudding has too much work. As an old school Jamaican l mix everything at the beginning and add butter to it and put it in the oven. Because of the butter, the top of the pudding is very soft and succulent.
