Egg salad is awesome. I'm definitely going to try this! My normal egg salad has diced onion and dill relish in it. However, my favorite sandwich is what my mom used to make when I was little: fried egg sandwich. Pretty simple to make and very tasty. Fry an egg over hard in a little butter. Season it with a pinch of salt and black pepper. The only dressing you need is ketchup. So to assemble, add some ketchup to both slices of bread and place the fried egg. It's one of my comfort foods that my mom used to make for our family when I was a kid.

You could do a slightly less fatty version by tossing them in a bit of melted butter and coating in cinnamon sugar then baking in oven until crisp.

I Love these egg salad sandwiches. When I was in Japan I was eating one for breakfast and one at mid afternoon tea almost everyday. They are so good and light. I just really love them.

If you can't get the Kewpi (I haven't found it here in Israel) and don't want to start from scratch you can sort of doctor Western mayonnaise to give it the Japanese flavour. To about one cup of bought mayonnaise add 2 tablespoons of rice vinegar and a couple of teaspoons of sugar and whip it well together. It won't be exactly the same because Japanese mayo uses only egg yolks whilst Western uses the whites as well - but it is a reasonable substitute. If you happen to have dashi powder a pinch of that also adds to the flavour.

I went to high school in Jaoan. I remember that I loved a sandwich that was cut in 3rds. . 1/3 was egg salad, 1/3 was ham and 1/3 was cucumber. I forget the name. It was so,good.

I used to make egg and olive sandwiches. Egg salad with chopped green, kalamata, or canned black olives. So delicious. Your egg salad looks so good!

I will try this version. I always add pickle relish and paprika in my mix. If I have it I also add either sprouts or spinach on top of the egg mix like a regular sandwich . It adds a good fresh crunch. Thanks for sharing as always!

folks, a great source of japanese condiments/food in the usa is mitsuwa and nijiya grocery stores. google mitsuwa or nijiya for locations. store locations are in calif/chicago/texas/new jersey/hawaii. they are great, they have everything!!

I tried your recipe this week, and it's great! Egg salad sandwiches I've had before always had a bit of a funky aftertaste, but this tastes amazing. I think the mayonnaise makes all the difference here, along with the addition of sugar.

My Japanese mother used to mix tuna and egg salad together. It came out really tasty . My mother would make them for family trips and cut the crust off and cut them into rectangles to fit into a rectangular Pyrex container.

The egg salad sandwiches look so yummy. I need to try this! It is good to use the crusts, too. I like Satoshi's idea for making a special treat, which sounds like fun. If you save them and freeze them, you can either blend them or grate them. Then you will have bread crumbs for breading things you would fry or bake, also. Thanks for the great video!

So many types of ways to do egg salad sandwiches; Hard to mess it up too much when it has such a delicious and simple base. I like adding sweet pickle relish, crumbled bacon, and/or onion. The thing people add the most that I think detracts, personally, is celery.

We call that "egg mayonnaise" in the UK - and it's my favourite sandwich. Even better is swapping the mayonnaise for Heinz Salad Cream (tangier than mayonnaise) and I like to butter the bread first. And yes, Shinichi - adding a little chopped onion is lovely.

Here in Canada I use either Mayonnaise or Kraft Miracle Whip which I prefer because it has a bit of a tang to it. Add a little onion salt and pepper for flavor. Will have to add a pinch of sugar next time ! Would love to find the Kewpie and compare the taste. Thanks for sharing.

Eggs in Japan taste so much better than elsewhere. I can't stand egg salad sandwiches in general, but love the ones in Japan. REALLY nice call on what to do with the crusts though. I totally forgot about doing that (heard about that years ago). Sounds so good to deep fry the stuff and make yourself some churros essentially..

I've never tried it with sugar, though using brioche bread adds some sweetness. I also always make it with a bit of S&B Oriental Curry Powder.

I think the kwepie mayo is what makes this egg salad different. kwepie tastes different from the mayonnaise we can buy here. and perhaps the eggs if they come from a different breed of chicken then here :) and in the Netherlands we don't usually put sugar in the salad.
