Ha, to be honest, I can only read katakana and hiragana so you’re much better than me. I like both, the first video is a more traditional way of cooking. This is a different spin on it, to get a more crunchy exterior. Thanks for watching

You can use any condiment your wish, but kewpie is completely different to salad cream. Try and pick up some. I don’t know where you’re based but large Sainsbury’s stock it here in the UK, as well as Japanese stores too.

Thanks so much. Actually, both recipes I like. The original one is the more traditional one, less crispy. This is a much more crunchy version.

I found your older video on Karaage, and noticed this has an egg and flour in it (plus more of the seasonings), is that to speed up the marinade process?

The old video contains egg and flour too. To be honest, the only significant difference is the extra coating of potato flour in this video to give the karaage extra crunch.

Chef Dai, can i use potato starch instead of flour? would that be too much potato starch taste/texture?

Use plain flour in the first stage when mixing with the marinade and then potato or corn starch for the final coating. You can of course use potato starch in the first stage too if you wish, just put in less, a bit at a time. Thanks for watching.
