😍 It looks good, you detailed instructions, I will try to make it. However, with my 10-year experience specializing in the production of fried onions and fried garlic, if the garlic slices are fried like that, the bitter taste will still be quite a lot. You should cut them into pieces, rinse with water to drain, and mix with a little wheat flour and then fry, its taste will be better.

I like your new method of additional 'b' shots. It does improve understanding of how the dish turns out. I would ask that you show the flame under the pan. All burners are different & the best way to show hot, medium, and low is the flame. Is it typical to eat the shrimp cold? The Rice could be started before the Shrimp & both could be could be done near the same time & served warm. Very nice work.

Ideally yes, cook at the same time (and easily done so next to each other as shrimp needs less care while being grilled). For the video making, we only have Mr JOC to film and a bit difficult to cook at the same time for him to shoot. 😊 Thanks for your advice and flame!

For me, I would use leftover cooked rice regardless if it is long grain or Japanese short grain rice because the cooked grains separate if is leftover and use garlic, ginger, soy sauce, sesame oil, sugar, and cooked eggs.

Haha thank you for your kind compliment. No, sticky rice is not short grain rice. Short grain rice is considered regular rice, not glutinous rice (= sticky rice). However, short grain rice is the stickiest rice among regular rice - you can see the fried rice is sticky compared to jasmine rice etc.

Thanks for asking. In japan, when we call “sushi rice”, it is steamed rice that’s seasoned with sushi vinegar seasoning and used ONLY for making all kinds of sushi. However outside of Japan people like to call regular Japanese short grain rice “sushi rice”... it is very confusing and wish it wasn’t called this way 😞
