Sharing a tip that worked for me: if I’m doing fried rice for dinner, I freeze the cooked rice for 1 hour (after it has cooled down) in the early afternoon, and refrigerate it until I need to cook. The rice texture is just nice for cooking fried rice, not mushy at all. That’s my hack for “overnight rice” 🍚🍙🍛🤫
@spicenpans6 жыл бұрын
Awesome! Great sharing, Selene. Thanks so much for the hack. :o)
@IslandGal968164 жыл бұрын
@Selene Wee.... I always have such a hard time making the right texture of loose fried rice served like in any chinese restaurant, no matter what. I tried with cold overnight rice, turned off the stove after I poured the rice in the pan and mixed in with other ingredients, used high heat, used jasmine/long grain rice, etc. They always turned mushy and not loose anymore 😢 The culprit may be that I cooked it on electric stove, instead of gas stove 🤷♀️
