How to Make Japanese Purin (Custard Pudding / Crème Caramel Recipe) | OCHIKERON

Creamy and smooth Purin (Pudding) recipe :)
You can use a mug to make this, too!
Packaged crème caramel (flan) is available at Japanese supermarkets under the name Purin (プリン "pudding").

How to Make Custard Pudding (Crème Caramel)
Difficulty: Very Easy
Time: 40min
Number of servings: 6 100ml cups
Ingredients:
((Caramel))
40g (1.4oz.) granulated sugar
1 tbsp. water
((Custard))
3 eggs
300ml milk
60g (2.1oz.) granulated sugar
Directions:
((Caramel))
Mix granulated sugar and water in a saucepan by tilting the pan. Then simmer until the sauce is browned. (Do not mix it with a spoon but tilt the pan to mix it. The sugar will recrystallize if you mix it with a spoon.) Pour the sauce into heat-resistant cups before it gets hard.
((Custard))
Microwave the milk for 2 minutes just until warm. Add 2 tsp. of water in the saucepan to dilute the caramel, then mix in the milk. In a bowl, lightly beat the eggs until combined but not foamy. Dissolve granulated sugar, then gradually add the milk mixture. Strain through a strainer to make it smooth. Pour the egg mixture over the sauce in the cups. Cover with plastic wrap or aluminum foil.
((Steam in the Pan))
Place some paper towels or a dish towel in a frying pan (so that you can gently steam the Puddings), then place the cups. Slowly add hot water in the pan (just about a half-inch across the bottom of the cups), cover, then cook on low for 20-25 minutes. Stop the heat and let them steam for 5 minutes with the remaining heat. Serve warm or put in the fridge to serve cold.
Note: Grease the cups with some oil or butter so the pudding will slip out easily.

1 thing I learned from making this... Do not poor hot sugar in glass cups (started cracking and glass shattered). Make sure the glass cups you use are heat resistance and don't poor the hot sugar while still boiling into the cups.

I converted the measurements to American standards. :) 40 g sugar = 10 tsp (1/4 cup -2 tsp) 300 ml milk = 1 14 cup 60 g sugar = 15 tsp (1/4 cup +3 tsp)

I usually cook low calories puddings but who doesn’t love Japanese desserts 🍮 this pudding is delicious 😋 although, it’s not too much calories(even with sugar inside) ~130 calories/ 100 g

Simmer 1/4 cup - 2tsp sugar + a tbsp water 'till brown. Add 2 tsp water to the mixture. Pour into heatable cups. Heat 1+ 1/4 cup milk in microwave Beat 3 eggs with 1/4c+3tsp sugar in separate bowl Slowly add milk Strain Pour into the same heatable cups Cover cups w/ aluminum Put paper towel in the frying pan. Put the cups on top of the paper towel Add hot water to ~1/2 inch across bottom of cups Cover and cook for 20-25 min on low heat Turn off the fire and leave for 5 min

I have made Julia Child's version of this recipe for many years. I am pleased to learn that the custard can be cooked on the stove rather than in the oven. You have a precocious talent for cooking.

FOR THOSE WHOSE PUDDING CAME OUT LIQUIDY only thing you have to do is to cook the pudding for 45-55 mins. Mine came out liquidy at first time too than I doubled the cooking time and it worked very well!!! I cooked it for 50 mins. :-)

@@ochikeron Unfortunately no. I'm going to try again later though, I think a couple of my eggs weren't fresh enough or something because they wouldn't mix right. They were kind of old eggs, so I think that's what went wrong.

if u want sweet caramel dont brown them too much. if u want bitter caramel its as brown as seen in the pic :) hope this helps

When you consider steaming on TOP of the stove for 12 minutes, that is CHEAPER than baking in a large oven at 350 degrees for 45 minutes and heating up the whole house. Great idea for a single or DOUBLE recipe! Thank you.

Very good. I used to make this all the time. Except in the recipe I used to make, the caramel teaspoon of vinegar or lemon juice in it. I have no idea what that was supposed to do :p One thing you forgot to mention is you need to be very careful when you are making the caramel sauce. It is extremely hot. I once gave myself a full thickness burn on my finger from it! So take my example and don't cook this when you have been drinking or tired and be very wary of it!

TreClaire traditional caramel is just burnt sugar but modern caramel like the ones you spoon over ice cream have heavy cream in them as well :)

Actually, you could use any cup or container that's, well heat-resistant, which is of material such as tempered glass, porcelain or silicon.

yes, creme carmel is flan. its just known by different names depending where you're from and the recipes can vary slightly! :)

Its good to see a different approach in making leche flan /Custard Pudding. 1. Using improvise steamer by using a pan ... i didnt know that hahaha 2. Removing chalaza. 3. Easy to make caramel. I like your tutorial its easy to understand and to absorb. Thank you. Ps; Did you used a whole egg or did you seperate it? (egg yolk only?)

It's good that it hardens in the cup because if it didn't harden, the egg mixture and the caramel would mix together and make a weird looking yellow brown mixture

no not really but if its microwavable then that means it can withstand immense amount of heat so microwavable glass should be ok 👌🏻

yes. it becomes soft when you steam it with the custard liquid.

I made these yesterday they were amazing came out perfect too so easy, i added a bit of vanilla extract yum yum thanks :)

This is also a traditional dessert in the Philippines and is called , but we add evaporated milk and Condensed milk to it; it adds an additional sweetness, but it's not recommended for people who don't like things too sweet

yes! you are right :) the sugar will recrystallize if you mix it with a spoon.

I think the reason it ended up with pores It's because ypu covered the whole cups with the aluminium foil, i would recomend letting a little gap so that the steam gets out and doesn't overheat the pudding, anyways it's delicious, i lov ur recipes ;)!

This is sort of how we make corn custard a traditional Christmas dish, except we use a small amount of sugar and we don't caramelize it. Excepting one thing, we also add 1/3 home made cream corn to the custard before cooking to set.

Tasted amazing!! Trouble is I only managed to make 4 puddings - I managed to get the caramel into 6 cups (just about, really had to eak it out of there) and then there wasn't enough milk. I'll definitely try again, it came out perfect with no lumps or cavities :D

I don't use sugar, I replace sugar with condensed milk, it's easy to dissolve and the texture is really really nice, it's way much smoother and more delicious ^^
