How to Make Japanese Strawberry Shortcake (Recipe) | OCHIKERON | Create Eat Happy :)

4/4 was my darling's birthday, so I made this shortcake for him :)
I received many requests for shortcake, so I'm finally making this tutorial!!!

Strawberry Shortcake (Birthday Cake Recipe)
Difficulty: medium
Time: 2 hours (6 hours or a day cooling time)
Number of servings: 1 cake
Necessary Equipment:
18cm (7.1-inch) round cake pan
electric mixer
Ingredients:
((Sponge Cake))
2 eggs *room temperature
60g (2.1oz.) granulated sugar
60g (2.1oz.) cake flour
20g (0.7oz.) melted unsalted butter
((Syrup))
20ml hot water
1/2 tbsp. granulated sugar
1 tsp. rum *kirsch, brandy, or any kind of liquor you like
((Decoration))
fresh strawberries
300ml fresh cream (heavy whipping cream)
1&1/2 tbsp. granulated sugar
a few drops vanilla extract
1 tbsp. rum *kirsch, brandy, or any kind of liquor you like
Directions:
((Sponge Cake))
1. Line the round cake pan with parchment paper. Preheat the oven to 170C (338F).
2. Beat eggs with wire whisk in a metal bowl. Mix sugar and place it over a bowl of hot water and melt the sugar and warm them up to body temperature. Then remove from the hot water and beat the batter on high speed with an electric mixer until white and fluffy. Then on low speed, beat for about a minute to set the texture.
3. Sift in flour little by little and gently cut through the mixture with wire whisk until somewhat combined. Then using spatula, sprinkle melted butter, and quickly lift up the batter to mix.
4. Pour the batter from heights of 11 inches (30 cm) into the pan (like ribbon) and drop the pan lightly on the counter to raise the air bubbles out of the batter.
5. Bake at 170C (338F) for 25 minutes.
6. Place a cutting board and a paper towel on a wire rack. Then place the cake pan upside down and cool with the pan on top.
7. When it's completely cool, wrap with plastic wrap and rest the sponge cake in the fridge for a few hours. *you can store it in the fridge for 2 to 3 days and decorate the cake when needed
((Syrup))
1. Mix granulated sugar and hot water until dissolved. Then mix rum (if you like).
((Decoration))
1. Combine fresh cream, granulated sugar, vanilla extract, and rum (if you like) in a dry, clean bowl. Float the bottom of the bowl in ice water, whisk the cream until it forms a soft peak.
2. Slice the sponge cake crosswise into 2 layers. Gently brush the sponge cake with syrup (brush all the surfaces which will be coated with cream).
3. Place one layer of the sponge cake on a plate. Coat the surface of the sponge cake evenly with the cream. Place cut strawberries over the creamed surface. Then coat again with the cream. Place another layer of sponge cake, and frost top and side with the cream. Garnish with strawberries.
4. Rest the cake in the fridge for 1 or 2 hours before you serve. In this way, you can easily cut the cake.

I made the sponge cake only today. I used rice flour instead of regular flour and it turned out so perfect. It is so soft and airy and not too sweet. Love it ❤

60g is 1/2 cup 20g is 1 1/2 tablespoons 20ml is 1/4 cup 300ml is 1 1/5 (so just 1/4 and alittle more) thats the conversions if anybody still wants them.

I love this cake recipe! The only thing I would say is that make sure those eggs are room temperature! I like to put them in hot warm water before just to warm it up enough so that they're not cooked. My first time making this was a disaster.... Since the eggs weren't warm enough, it didn't beat up to the right consistency and was as flat as a pancake. It also helps if you have a hand mixer, beating it by hand is really difficult.

There is a peach sponge cake recipe that I make that is very similar. So delicious. A bit simpler with less steps, but an amazing sponge cake all the same. Look forward to trying this one.

I will never get over how polite your oven and rice cooker sound. I know there's no rice cooker in this one, I'm just saying. I want an oven and rice cooker that talk so politely to me, even if it's Japanese and I don't really understand it.

I think definitely. Go crazy with ANY fruit. :) Maybe refrigeration becomes more important, depending on the type of fruit and it's tolerance to room temperature.

I made this for my mother's birthday. I used an 8-inch pan since I couldn't find anything smaller. The sponge cake came out thinner, but it was still perfectly delicious. Thanks for sharing your recipe! :)

My mum and I just finished making this and ate some of it and it was really nice. We didnt have any liquor so we used a strawberry sauce that our supermarket had in the fruit section. I Will send you some a few photos of how it turned out on facebook!! Thank you for sharing this great recipe =) And we cooked ours in a flavor wave with one of those cake tins with the hole in the centre!! Turned out great!!

Hi ochikeron! :D I have recently tried this strawberry shortcake recipe and they TASTED HEAVENLY :) They tasted so good and they weren't extremely sweet, making them appeal not only to children but also to the adults as well. My aunt was in Japan (Osaka) for three years, and now she is here in Indonesia. Several days ago she commented that she wanted to bake shotokeki; "... I want to make shotokeki as fluffy as Japanese's ones. I wonder how they could create a cake that fluffy and soft." It is delicious. My cake turned out soft and spongy unlike another recipe I tried. I am replacing the strawberries with peach slices next. The sour strawberries were actually ok with the sweetness of the cream and cake. I added a little gelatin to the whipped cream to prevent bleeding, i.e. cream becoming watery.

hi ochi! i've baked a cake following this tutorial and my parents loved it so much! it was really good! i ate a portion after it was baked and then we(with my parents) ate it after a few hours in the fridge. then the day after it, i ate the last portion. from my opinion, it was more delicious after a day in the fridge. Just telling :) And thank you for this tutorial! keep it up :)

A few days ago I made it and gave some to my two big brothers, my big sister and her son, my dad and my mom which left one slice for me. But my dog ate it and I had to make the whole shortcake again! well... every kind of recipe of this I've seen uses some liquor, either Brandy, Kirsch or Rum if you can get even a small amount, that'll do... since it barely needs some

どうも初めまして。 ちと、気になりすぎたんでコメントします。自分パティシエなんですけど、 粉を混ぜる時ホイッパーで混ぜるならもっと大きく底からすくいあげないと生地が死んでしまいます。 もしくはゴムベラでやった方が死ににくいです。 あと生地を取り出して覚ます場合は、型から出さないと理論的に余熱で蒸されてしまい、しぼみやすくなります。そのため型からだし、網などにのせ、なるべく蒸気を逃がすため高さあるところに。。。キッチンだとガス台の上とかに出すのがベストです。 あと生クリームはもっと立てないとダメですね(;´д`) 崩れ安いショートケーキになります。。 少しでもアドバイスになればと思います。 長々すみません。

Ochikeron, I just wanted to tell you how much I LOVE your videos. 😻😻😻 I actually made this today and it is sosososo soooo good! 🍓 I halfed the amount of sugar for the cake though. Also I messed up on the whipped cream. 😪 I was going to post it on Instagram and tag you in it but it wasn't very photogenic. Still delicious though 😸 hopefully next time it'll come out prettier.
