Great to know we share the same traditional fermented food culture. Tell us more! Do you use river/lake fish like Japanese example, or use sea fish?

Oh man, this looks amazing. I love the idea of fermenting the fish with the rice. Makes me wonder if it's possible with other types of fish. So many questions. Thank you so much for this FASCINATING video! 🙏

That is pretty cool! Rice inside fish? Ive never seen that kind of dish. Wonder what the taste is like of pickle fish.

Funazushi is fermented for years and results in a product that tastes similar to a strong, tangy, aged cheese.
@Faithnato6 ай бұрын
@@restaurantman Huh, interesting. I imagine the taste might be close to pickled mackerel but more sour since Japan has a lot of vinegar-based food (and they taste good). Thank you for making it clear!

@@Faithnato Funazushi is also salty and sour. Especially, part of rice is very salty. If you go to Shiga Prefecture in Japan, you can buy funazushi in local supermarket or souvenior shop. Small pack of funazushi is sold as souvenior.
