Today, I'd like to introduce a sweet dorayaki that can be made with just one egg.
You can make two or three dorayaki at a time, so please feel free to try it.
Be careful not to mix the dough too much, or the baked dough will easily shrink.
Adjust the anko by adding water so that it is soft enough to be easily stretched.
Wrap the sandwiches in plastic wrap to let them settle, which will keep the dough moist.
Adding a lot of sugar to the dough will make the dough moist, but I wanted to make a crust that was not too sweet, so I reduced the amount of sugar by half.
The sweetness of the crust is very moderate, so please adjust the amount of sugar to your taste.
Dorayaki
(Ingredients) For 2 or 3 pieces
1 egg (60g)
3 tablespoons sugar (30g)
1 tsp mirin (sweet cooking sake) or honey
1/2 tsp (2g) baking soda (or baking powder)
1 tbsp water
1 teaspoon cooking oil
70g flour
3 tbsp water
120g sweet bean paste
2 teaspoons cooking oil for hot plate
In the video, millet sugar is used.
You can use any kind of flour.
You can increase the sugar up to 60g. (The more sugar, the softer the dough.)
(The more you use, the softer the dough will be.) ・For frying, a Teflon-coated pan works well.
