Okay, but be aware the best kefir comes straight from the fresh grains, doing it like this is good for 7 days. Because it’s losing good bacteria.

Finally a great explanation of how to make a real kefir from an Eastern european guy!!! Unfortunately most Americans don't understand what kefir is supposed to be and abuse and torture it, making smoothies, straining and producing water from it, adding cinnamon, sugar etc, I saw it all here. Kefir came originally from Georgia to Russia and they kept their recipe in secret for many years. The way I think of it, you should respect that culture and do it right or not at all. So I appreciate that someone finally do it correctly, it is also super simple!

Hello, what are the temperatures at the beginning of the fermentation? Like, can I use refrigerated (4C) kefir and milk or do I have to heat them a little? Also, do you let it ferment for two days even in the summer? Thanks!
@IONHowTo
@IONHowTo 3 жыл бұрын
No need to heat anything. Milk and kefir are cold from fridge in store. Then I bring them home and instead of puting them in the fridge, I remove half glass from each milk bottle then put kefir to replace that. I drink 1 glass of milk - leftovers haha. Remaining unused kefir, you can drink later or you can put it in more milk later if you want. No heating! Usually +20 to +30 celsius room temp is ideal for Kefir. Lower it just takes longer and if its 35 you would probably have it ready much faster. It's set and forget (for a while). Also shaking it after 1 day makes it more creamy when it's ready. Enjoy it! I have dry kefir grains brought from Russia but it seems like a long story to make and remove so using existing Kefir to make more is so much easier. Consistency and taste will be the same as what you already have. I've noticed some Latvian kefir types are more thick. When making more with that the result also becomes super thick like yogurt. My favorite is creamy but drinkable not like milk cream but more like greek yogurt with a bit of water. Polish and Russian kefir are my favorites.

What do you mean we can’t get “live” milk? And by live I’m guess you mean raw milk with natural live bacteria in it? There are only a few state that are not allowed to sell raw milk but otherwise, if raw milk isn’t available in stores, you can find a local farm who sells raw goat or cows milk. But it’s definitely available to us.

@@JBSoulmates Yep, there are a couple of states where we can't. If I want "raw" milk here, I have to resort to subterfuge. I can buy raw milk if I want to make lotions or hand creams or cosmetics. It I have to have a farmer friend, and what kind of friend would I be to put them in danger. Or, I can buy a "farm share", at exorbitant prices. So... I consider that we can't, "here". :-/

@IONHowTo
@IONHowTo 7 ай бұрын
The kefir you use should have a short expiry date. It doesn't need to become solid and you might not want that actually. That's why I shake it a few times before being ready so the kefir becomes creamy not pieces of curds and whey. If the milk feels more thick, it worked and enjoy it! I noticed a Latvian kefir that makes the milk super thick when used like this - I don't like that. I prefer to drink the Kefir so I like less thickness on it. I made a few more videos showing what the texture should look like.

Haha! No need for precision here. You could put 2 spoons and it will still work. I show with the glass how I do it. Recipes for me are more of a nice story but everyone adjusts to what they like. You put more kefir in the milk, it will be ready faster. Minimum id 1 tablespoon for 1-2L.

So what is the actual milk to Kefir ratio for fermentation?
@IONHowTo
@IONHowTo Жыл бұрын
There is no ratio but the more you put the faster it becomes ready kefir. I use the glass on purpose for myself to easily do it and to show a scale but even one spoon of kefir is enough really. The kefir culture will multiply and process all the milk eventually.

this is not true Kefir. its a drinkable yogurt. The probiotics will be slightly a different and you will be lacking the kefiran (the chemical produced by the grains that make it kefir). What you made certainly can be tasty and healthier than regular yogurt, but its not really kefir. It may continue to produce something fermented for a very long time, but without the grains, each generation will be more and more dominated by only a few strains it could end up as a mastoni yogurt (those bacteria are there) or a thinner yakult like yogurt (those strains are in there too) or just some mix of fermented milk, but lacking some of the diversity of grain-based kefir.

The supermarked kefir is not a kefir. It is more a kind of yoghurt or. You cannot produce kefir grains from them! Normally if you use the bottles very often without washing, after some months many little kefir grains started to grow in the casein layers if there is the lacto bacteria and yeast collection of a kefir grain in the milk.
