Recipe:
Soup Broth
1 Whole Chicken or Free Range Chicken or 2 Pieces of Chicken Breast and 2 Pieces of Chicken Thigh.
5 Pieces of Thinly Sliced Ginger
1 Tsp of Salt
3 Tbsp of Fish Sauce
5 Liters of Water
1 Tbsp of MSG
6 Tbsp of Chicken Bouillon (Or Chicken Stock).
1 Stalk of Lemon Grass (Chopped into 4-5 Pieces) or tie into a knot (as shown in video).
Noodles:
1 Bag of Rice Flour
1 Bag of Tapioca Starch
2 Tbsp of Glutinous Rice Flour
4 1/2 to 5 Cups of Hot Water
Prep: Wash, Drain, and Chop or Minced to desired size. 👇🏻
Scallions
Limes
Cilantro’s
Bean Sprouts
Condiment:
Fried Garlic 🧄
Fried Onions 🧅
Fried Shallots
Sriracha 🔥🌶
Golden Mountain Seasoning Sauce
Chili Oil 🌶🔥
Chili Powder 🌶🔥
Garlic Oil 🧄
Black Pepper
White Pepper Powder
Fish Sauce
Hoisin
Sugar

Recipe:
Instructions 📝
1. In a Pot of Water. Add Salt. Bring to a Boil.
2. Introduce Chicken to Pot.
3. Add Salt, Lemongrass, Ginger, Fish Sauce, Chicken Bouillon, MSG, and Bruised Lemon Grass Stalk.
4. Let this Cook on Med High until Fully Cooked. 1-2 Hours.
5. Remove Chicken. Let it Rest. Once Cooled Down. Shred Separate Chicken to Bite Size Pieces.
6. Reintroduce Chicken back to Broth.
7. Add more water to broth to bring back up the Soup Broth Level as Broth has Evaporated.
8. Bring back to a Boil. Let this Cook for another 15-20 Mins.
9. In a Separate Pot of Water. Cook your Khao Piek Noodles. Until the Noodles are Appears Clear or Translucent. Usually this takes 2-3 Mins.
10. Place your Cooked Noodles into a Soup Bowl. Ladle your Desired Amount of Broth. Garnish with Veggies, Herbs, and Condiments.
