This easy, how-to video guides you in preparing a sweet tasting Asian dish that very few Westerners have experienced. Kueh Tutu-also called "Putu Piring" in Malay-is a popular steamed rice cake snack eaten in Singapore and Malaysia. I show you how to make these without using the special tutu mold. There are many variations of this dish in other Asian countries, but all have in common a soft, yet bouncy, texture. If you haven't tried these delightful treats, don't miss out any longer.

INGREDIENTS:
Portion: One dozen
250 g (2 cups) rice flour
3 stalks pandan leaves
1 cup (237 ml) boiling water
2 tbsp (25 g) sugar
1 tsp (5.67 g) salt Note: reduce to 1/2 tsp (2.8 g) if you like it to be less savory
100 g (1/2 cup) gula Malacca or palm sugar
40 g (1/2 cup) graded coconut flakes
1/2 sheet of banana leaf
Half a dozen sheets of muslin cloth - large enough to wrap around a kueh
One to two small egg tart molds

I am David from México, 27 years ago I was in Singapore taking a course that lasted 30 days . I tasted for the first time this delicious treat!!. I was so pleased with the flavor that I asked for the name. I remember “tutu cake”. I haven’t tried since then. Well after 27 years maybe I don’t remember much about my course in Singapore but I do remember 100% the flavor of the tutu. I will try to do it here in México although I will have to change a little bit some of the ingredients. Thanks a lot!!

I tried this recipe! I would recommend adding more sugar and water to the flour though because mine came out quite dry and tasteless to my taste. Thanks for the video :)

Bangladeshis enjoy something very similar as this. We use date sugar and coconut as filling. Called bhapa pita. We definitely have similar roots!

The fundamental concept of this cake very similar to countryside’s in Vietnam and Cambodia they put the ingredients into a cyclone bamboo steam in a special pan,for a while,then removed it from bamboo cyclone and slices put some coconut and sesame seed mixed.

Please clarify the ingredients in your recipe. 250g of rice flour was noted as 2 cups, which should just be 1 cup as it is only 8.8 oz if it is 250g. So please verify how much rice flour should be used, 1 cup or 2 cups? Thank you.

Thanks for watching. You don't mix the cup measurement with the matrix system. The cup is for measuring of volume, not weight. If you fill a cup with flour and then weight the flour separately, it's approx 125g. I hope this helps.

Hi, when I remove the muslin cloth after sitting in the steamer, the flour came loose. Why is it not holding together like yours?

I think you pressed the rice flour too tight so they were not cooked through. Try packing it lightly so steam can circulate. Good luck!

Any idea why there is still so much flour at the base of the mould after steaming? I've tried steaming for a long period of time but it's still the same. Thank you.

May be you pressed the rice flour too tightly! Just place the mixture onto the mold, do not press or compact it, keep it in place and un-mold.

This is just plain rice flour. Glutinous rice flour will not work, it's too sticky

Try to add a little more water. Also, don't press the dough too tight, give it rooms to expand. I hope this helps.

Pandan is used for flavoring. It has a sweet aroma. When you heat it up, it releases its aroma and infuses the rice flour in this recipe. I hope this helps.

May I know why the tutu doesn’t seem to cook after steaming for about 20 mins?

There are two reasons I can think of: 1. don't press or compact the rice mixture when you spoon into the mold, the rice will expand during steaming. If packed tightly, steam can't circulate, 2. Be sure to use enough water on the rice. Good luck!

Same problem for me I checked 8 mins on medium heat. Still very dry. Tried twice. My mixture was same powdery consistency like the video. What did I do wrong?

I believe tutu from word tamil word putu. My humble request say puttu not tutu. This is because puttu is indian’s traditional food. You can say kueh puttu. Thanks.

kueh tutu is not indian - it's originated from a traditional chinese rice cake recipe from Fujian Province in China. The creator of this recipe adapted it by creating various fillings. "tutu" is simply the sound of the steam hissing as the cakes are steamed in a special steamer.

The recipe did not work for me. It is too dry. I had to throw away most of it because nobody wants to eat. Can't get the texture like those sold outside.

Sorry to hear that. Two things I found that make this recipe dry is packing the rice flour too tight (thus preventing steam getting thru) in the mold or not mixing in enough water.
