In this video, I’ll show you step-by-step how to make lasagna soup using simple ingredients like ground beef, Italian sausage, tomatoes, herbs, and of course, plenty of cheese! The best part? It’s ready in under 45 minutes. 🍲🧀
Recipe:
1/2 lb ground beef
1 lb Italian Sausage
2 tsp Italian Seasoning
1/2 tsp Oregano
1 tsp Garlic Powder
Salt and Pepper
3 tbs Tomato Paste
28 oz Tomato Sauce
1 quart Chicken Stock
1/2 box Lasagna Noodles
1/2 cup Heavy Cream
Cheese Topping
1/2 cup Mozzeralla
1/2 package Borsin Cheese
1/2 cup Ricotta Cheese
1/4 cup Parmesan Cheese
In a large pot or dutch oven, add just a little bit of olive oil. Really any oil or no oil will be just fine but for an recipe based on italian food, olive oil seems like the right choice.
One the pot is heated up add ½ pound of ground beef and 1 pound of Italian sausage. You want to cook these until the are nice and brown but they can still be a little pink in a few places. They will finish cooking before the soup is done!
While the meat is browning you can add your seasonings, I used Italian Seasoning, Oregano, Garlic powder, Salt and Pepper. You could add any seasoning that you would like to. You may want to add some chili flakes to give it a little spicy kick!
When the meat is almost brown, you want to add your garlic, and onion, tomato paste, and you can also add your brown sugar at this step. I just forgot about it when I was making the soup and realized it was missing when I tasted it.
You will want to give that a good mix and then add your tomato sauce, and chicken stock. I used a 28 oz can of tomato sauce and I recommend getting the san marzano tomatoes. They are usually the best flavor wise when it comes to canned tomatoes.
Add your chicken stock and break up the lasagna noodles, cover and let simmer for 10-15 minutes until the noodles are fully cooked.
How to make the Cheese Blend Topping
In a bowl add mozzarella, borsin, ricotta, and parmesan cheese.
Mix them up and set them aside!
