I made this with fettucine, diced canned tomatoes, and heavy cream. It came out amazing. I couldn't believe a recipe without any strong spices in it would be so good. And it makes a ton of food too.

Hey John. You asked for suggestions and you’ve helped me with so many deserts I’d like to give back, so here are mine… 1. Start with diced pancetta or bacon, render it and add half the onion and cook until it starts to caramelize. 2. As that’s cooking take the rest of the onion, celery and carrot and use an immersion blender to make it into a paste. Then fry that off for about ten minutes in the Dutch oven. 3. Use half pork and half beef (pork, veal, beef mix if you have it) fry it off in a frying pan until It starts to pop. You want the Maillard reaction. 4. Use wine (white is the traditional for this, I prefer red) and reduce it THEN add stock. 5. Fry off some tomato paste before adding the canned tomoatos. 6. It has to cook four hours minimum! 7. I discourage using heavy cream. I find it’s think and dulls the flavours. Milk is best.

@ nonsense, the official recipe recognized by the bologna chamber of commerce calls for stock. Only person I’ve ever seen say no stock is Vincenzo and he went back on it a year later and said you can use it.

Sofritto is the veggies cooking in the pan at the beginning, and every time I smell it, I go back to my nonna cooking for me or my dad, and it brings so many happy memories!! I like to use Coconut Cream instead of heavy cream. ( NO milk of half half,,too much sugar ) Your recipes are great. This is tomorrows dinner. A few days ago, i made the delicious NO BAKE strawberry pie. Easy and so good. My lucky neighbor gave it rave reviews too. Thank you for all you do.

In Indian cooking, we add the bay leaf right at the beginning, once the oil is hot.. This allows the flavor of bay leaf seep into the oil itself

I understand what you mean but usually for the dishes that we do that, it really brings out that bay leaf flavour (for example, say Matar pulao etc.) and while it may seem good to do the same here, I just wanted to add that it might really make that ingredient as the star of the show rather than having it work with the rest of the blend. Some people might prefer it but based on the general rule (not that this is a traditional recipe anyway) Italian food is usually about getting your ingredients to work together as a team rather than have a single ingredient be a show stopper. I can see why he didn't do that here. Again, nothing wrong with either method but I suppose it'd heavily depend on personal taste. 😊

This is so similar to how I make bolognese! Except I use TVP soaked in vegetable broth and a bit of marmite instead of the meat for a plant-based version and add a liberal amount of dried Italian herbs in the end, sometimes a bit of fresh basil if I have some. One of my favorite dishes!

Thank you for your version of Bolognese! Whenever I make my Italian sauces I leave the bay leave in. And during dinner I announce that whoever gets the bay leaf has to do the dishes! Ha ha! I rarely enforce it, especially if a guest is the victim. It just a silly thing I like to do. 😁❤❤

Top tip, add a tsp of salt to your vegetables at the start. This will bring out some of their liquid and so intensify flavour.

There's no problem freezing the sauce with the pasta. Still tastes yummy when defrosted and re-heated.

The Carrors are what cuts the Acidity of the 🍅. I do not add Milk to mine, as I tend to like the rich red color. I use Burgandy to my Bolognese Sauce. I then slow cook my Sauce on high in slow-cooker for 3-4 hours.

So true. As someone with Italian ancestry, Italians just have this really weird superiority complex when it comes to food. If someone doesn’t cook EXACTLY the way they want them to, they throw a hissy fit. Love your videos, have made many of your recipes. I have a bolognese recipe I have been using for years. All of the same ingredients minus the garlic. I’m curious why everyone thinks all Italian food should be loaded with garlic. We Italians do not put tons of garlic in all of our dishes. Just saying
