Cooking Sherry...in some places in the US is sold with tons of salt in the mix to prevent people from drinking it or underage kids from buying it to drink. Most supermarkets will have Sherry that in the wine section of the store. So it's readily available...however avoid things on the shelf labeled as "Cooking Sherry" in the US. It's mostly salt.

I use sherry in most of my Asian dishes, as well as creamed soups and sauces. It is a Fortified wine and does not deteriorate in the way normal wines do. Wikipedia says: "Fortified wines resist spoilage, as their alcohol content is too high to permit bacterial growth." I keep it in a cupboard for months with no recognizable deterioration of flavor or usefulness.

Is the roux really necessary, given that you're adding the lobster to 220g of mascarpone? couldn't you simply cool the aromatics and then add the lobster and cheese? What does the roux do to improve the dish? Thanks.

Who the fuck cant find/ doesnt know what sherry is ? And FYI NEVER buy a cooking wine. Chef you are wrong. Never colk with a wine you wouldnt drink . Ever
