How to make homemade hard-candy lollipops using a candy mold, a cornstarch mold and no mold at all :)

2 cups white granulated sugar (200g)
2/3 cups corn syrup (160 ml)
1/4 cup water (60 ml)
flavouring (like almond, lemon, orange extracts) or candy oils. I used 1 tsp (5ml)
food colour if desired
Combine sugar, corn syrup, water, flavouring and food colouring in a large saucepan. Heat over high heat, stirring constantly until mixture starts to boil. After the mixture boils, stop stirring and reduce heat slightly keeping the mixture at a vigorous boil. You can use a pastry brush dipped in cold water to wipe down the sides of the saucepan to dissolve sugar crystals. This is supposed to help sudden crystallization of the sugar mixture, but this has never happened to me in all the years I have been making candy.
Cook the candy until it reaches a temperature of 310 F (154 C). If you are making free-form lollipops, place the hot saucepan into an ice bath to cool it down. Let sit about 20 seconds. Swirl pan 2 minutes more to cool.
Pour syrup into another container with a spout if desired. Working quickly, pour syrup onto baking sheets covered with silicone mat or parchment paper, forming circles and spacing circles about 3 inches apart. Press a lollipop stick into each circle. Add sprinkles to lollipops if desired, pressing them into the candy (carefully) with fingers or wooden skewer.

NOTES:
This candy will become sticky at room temperature very quickly especially in a humid room/climate. I find that if you put the in the refrigerator (not freezer) UNCOVERED they will stay dry.
I mention in the video that I added the colour at the beginning and that this was okay, after reading a little about this I have found the following on this website:

"And also (I could go on and on about colors) color should be added late in the cooking process, after the syrup reaches 275 degrees. The reason is that trace amounts of acid in food colors tend to "invert" the sucrose, a side-effect of which is to soften it, making the end result sticky. The longer the acid is in contact with the hot syrup, the more pronounced the inversion."
I recommend adding the colour after the syrup reaches 275F and maybe that will help with the stickiness.
Corn starch molds:
Sifting the corn starch into the container may help achieving a smooth mold, also properly smoothing the top will help too.

I love that the cornstarch molds pick up details so well, because you could probably push a leaf into it and make leaf-shaped lollypops for autumn and they would look real. :)

Well, as you know, I have this crazy fear about making sugar stuff on the stove. But I need to grow up and start to test it. We make it with li hing mui inside of them and they are DELICIOUS. So it may be time. Thanks for showing us and sharing how to clean out that pan.

I used to be scared of sugar on the stove too. :) I got over it by starting with a really big heavy bottomed pan and making a small batch, maybe that would work for you.

BETH!!! Love your channel too! Get your feet wet with a chocolate fudge recipe to get used to using a sugar thermometer its not so easy because you have to constantly stir to keep it from getting grainy but it still seems easier than sugar lol

I bought a chocolate mold years ago and washed it. I wanted to use is right away and wanted to dry it quickly so I put it in the oven on low and within a few minutes it was melted flat! Learned the hard way too, lol.

I don’t have access to candy molds, at least they’re difficult to find here, so I thought I was going to have to wait to make the lollipops until I could order some from the States or overseas. I’m so happy to report that the lollipops turned out great! Not perfect like I’d imagine from a mold, but good enough for me!

Hi, yoyomax12. There is no need to mix the sugar, corn syrup etc. If you just put all the ingredients to a boil is okay. The cornstarch mold is very interesting. Going to try that one. Thanks for the tip

I was waiting for the clean up because I really want to make christmasy ones this year because my mom, step dad, brother and sister will be visiting us this year, and the idea of the clean up was terrifying for me, but since it's so easy, I can't wait for December so I can give these a shot!

The sides and bottom may have some crystallized sugar on them and may cause the whole batch to crystallize suddenly. You usually don't scrape the sides down for fudge either :)

Instead of cornstarch, you can also use powdered sugar. :)

No you can't, because if you do, when you pour the hot candy in, the sugar will likely melt.

Yes all you have to do is omit the food colour. They won't be perfectly clear as the candy will be slightly yellow.

Gummies and hard candies that are mass produced (gummy bears and Jolly Ranchers for example) are all made using the corn starch method. Huge trays with corn starch are molded and poured. After the candy is set, they are sent to huge drums where they are tumbled. The tumbling buffs and polished the candy and gets rid of all the corn starch residue. The the starch is sifted and used again for another batch.

I'm intrigued by this process of using cornstarch also! I'd love to see another video of your experiments. I wonder if a rub down with a bit of vegetable oil would remove/shine up the candy after it's removed from the cornstarch.

Mr. Baloney would not recommend for children, the high temperature can do serious damage, even making taffy at 250 can result in serious burns

I used the corn starch and they turned out great. I made mine vanilla. we had so much extra i drizzled the rest on parchment paper so it made like a lollipop brittle!

Hello! Yes you can put the stick in first, but they have a tendency to more around that way and you run the risk of having the bare stick show through the back of the lollipop

In some factories, they use corn starch molds for gummy candies. I have used them before with my suckers. I just take a dry paper towel to wipe off the corn starch.

My thermometer says 245 degrees, but then the sugar started browning, is my thermometer faulty or is the sugar just heating up too quickly?

Do not allow the thermometer to touch bottom of pan.

It's also best to test your thermometer with boiling water. It should read 212F once boiling, if not, account for the difference when boiling your sugar mixture.

I have a suggestion, with the lollipops with the sprinkles, you should try and put the sprinkles in the moulds before you pour in the lollipop mix.

You could leave the measuring glass cup in hot water and when you pour the mixture from the pot into it it'll be hot and when you do the free form it'll still have a watery consistency

I know this would take a long time but you could pour the mixture into the mold about half way then sprinkle on the sprinkles and pour the rest on :)

I think the recipes have you add the flavorings and colorings at the end so that you may create more than one flavor and/or color per batch.

Wouldn’t you use powdered sugar instead of oil/cornstarch? I make my own recipe all the time and powdered sugar works perfectly for dusting and making my own molds
