How To Make: Macedonian Zelnik and Vieno (Ep.1)

Hello Everyone. Welcome to the first ever episode of Afternoons with Baba. In this video i have prepared Macedonian style Zelnik and vieno! The Vieno is a famous Macedonian dish used for celebratory purposes and the Zelnik is a more commonly made recipe used for a weekly meal. In my personal experience these two dishes go hand in hand and have become a family favourite. I hope you enjoyed watching this episode of Afternoons with Baba.

This video gave my heart and head great love and memories! My Baba Lefta used to make this with her sisters. I have all of their original tools, including a long stick they used to roll the dough. I make this a few times a year for Family gatherings.

This is the Pita dough that my Mother used to make and I lost her recipe so I am thrilled to see you make and share it! There is no kora or filo that come close to this dough. It is so delicious. Thank you so much. By the way, my Mother after becoming a Baba was called Baba by all my son’s friends and then by everyone. She would introduce herself as Baba too…I think only difference is that she would use butter between the layers of “pancakes “ and she used cake type yeast but really the same awesome recipe! I can’t wait to make this myself. It’s been years since I have enjoyed this type of Pita!

The zelnik and vieno are very traditional Macedonian dishes, when I was younger I also used to use butter but my family needed something with dietary restrictions I have switched to oil. I love old time Macedonian things as things were when I was very young in the 50’s and the old folks who have gone on to the next world. The thumbnail brought me here and I'm glad it did! My Turkish grandma used to bake the very same thing as the one you call zelnik and we call it "pite". Altough I should add she was born in Kastoria(southern macedonia) when it was still part of Ottoman Empire and came to Turkey in 1920's..Anyways greetings from Istanbul

I just want to say that your dough recipe is perfect.! Thank you! Thank you! I was having difficulty with making the dough, and I followed you exactly to the tea. Temperature of water into the yeast between 50 to 55 C. I am so happy I found you. Now I can make Zelnik just like my Baka!

Yes you can use a white table cloth, either cotton or linen. Just make sure to wash after use to prevent oil discolouring.
