I’m from Malaysia so it’s quite interesting to see how Maple syrup is made. Amazing that 1 tree can produce 1 gallon of sap per day and all the processing required to bump up the sugar concentration

Yes, that's correct! It takes a lot of boiling! Typical yield is about 32:1 for sugar maple trees. So 5 gallons of sap would give you about 20 oz of Maple Syrup! It's definitely a labor of love!

I think you answered it, but how long can I store the sao before boiling and is there an ideal temp to store it? I know you said 40 degrees for about a week, but would it be ok in a fridge too for longer?

Yeah, should be okay for longer than a week, but before your use it, check the smell. If it smells bad or starts to look cloudy, something is growing in there, might want to throw it out at that point! 👍

Good question! Short answer: about 3-4. Longer answer: With one 20lb propane tank, you can get about 15-20 hrs of boiling, which is enough to boil down about 15 gallons of sap. I get about 15-20 oz of syrup from 5 gallons of sap. A typical ratio is about 40:1, but depends on the type of Maple tree. It can also vary from year to year depending on the weather, and it can also vary from tree to tree!

No, but believe it or not, they can be tapped for syrup! Birch, walnut, hickory, and even elm! The sugar content of the sap is much less than maples. Happy sugaring!
