This is truly the best! I'm vegetarian so I replace pork with mini portabella mushrooms and chicken stock with vegetable stock. Fool proof. I must have made this about 8 times now and it comes out good every single time!

I used Gochujiang instead of doubanjiang and it was magnificent! Would recommend, for anyone who can’t find it. Luckily I DID find sichuan pepper, which added a very unique sensation and flavour!

Btw, this is what I learned just now after I tried this recipe, is to REMOVE the BLACK SEEDS inside the SZECHUAN PEPPERCORNS before grinding them because they feel like gritty sand in the mouth. It was my first time using the peppercorns and I had to Google about it while eating this mapo tofu! Great recipe though!

Thank you for the recipe! I had to adjust the recipe for my kids for the spice level and cooked it without the peppercorns since we didn’t have any. I also didn’t have the light/dark soy sauce just regular, but I added some oyster sauce/hoisin sauce instead and a little bit of mirin since my kids like it a little sweet, and it was still good!! At least I had the doubanjiang. Next time I will definitely make it with the peppercorns to take it to the next level! 😊

I have been cooking all different cuisines for decades but I have to admit that I have never cooked with tofu. I am finding different instructions online about pressing or soaking in salt water. I see in this recipe you chose to soak in salt water. Is this what you recommend for all soft/medium/firm or just a specific one? I appreciate your input because I think your recipes and techniques (also your personality and I love your Mom) are amazing! Also, I used your marinade and dredge from the Honey Prawn recipe and then topped the prawns with my own recipe for salt and pepper prawns. I use Sichuan peppercorns, black pepper, and sea salt, ground up, and then top with scallions and red chili flake. Super crunchy prawns loaded with flavor. Out of this world amazing! Thank you for all of your inspiration!

Sound is slightly better in this video than the last Korean pork rib video, still picking up ambient background noises, but noticed sound turned down during tastings, which is appreciated! I went to Chengdu in 2011, I was BLOWN AWAY by hot pot hahahaha! My friend and I spoke not a work of mandarin, the waitress spoke not a word of English, but we worked it out! It was so much fun - and the panda breeding facility is awesome (our reason for going hahaha)

This is one of the best. Did not put the chili powder and use 5 colours peppercorn, no Sichuan peppercorn. It was just spicy enough for me. Added 1/2 medium onion. So tasty..
