I literally scrolled down on hundreds of vids just to look for this particular pasta. Ahahaha its so particular that not much people even knows about it, i wasnt even expecting that this channel had it. I am so happy that you guys do though ahahah. I will forever be a fan of this dish. I only got to know it because of my tuscan boyfriend, and its the most amazing dish ever! ❤️

COMPLAINT ALERT! By some strange miracle I was suggested one of your videos last week and I have been religiously watching these all weekend and I have one complaint that seems to happen with every single video... THEY ARE TOO SHORT! I would love it if these were two or three times the length. I want to learn more about each particular Granny and why she does certain things the way she does. These videos are awesome. They give me hope. I love them so much and for the first time ever, I'm going to make my own pasta because of these videos but they are sadly too bloody short.

Well, once upon a time there was a hungry KZbin algorithm who got indigestion if videos got to too long... now its appetite has changed and it seems it would like something a little bit more substantial - so I'll be trying it out in a few weeks or so. What you are asking for is in fact a telly shaped episode which takes lots more time to shoot and edit etc - there is only me and an editor, so I'm not sure if I can do one a week. Pasta Grannies Vicky, you know whatever u give us, we will love. Video editing is a pain. But once in a while it would be fun to watch a longer video. I feel like we've been invited into these amazing homes, but only to stay a min & move on. These are amazing Grannies & I'm sure many of us would love to know more about them & their traditions. Vicky I am SO glad to see this video. I did a "dry run" of making Tordelli before Christmas. I found a recipe on line which was somewhat what these woman made but did not have the ingredients of bread soaked in beef broth. I wasn't happy with the recipe I used and now want to try this recipe. I am looking for a smoother filling which holds together and when you cut into it the filling doesn't fall apart and is dry. Thank you for this great video! As always you know I look forward to Thursdays!!! Ciao!

Im surprised you guys dont have a show on PBS (Boston, MA), Food Network or Cooking Channel. Although super quick, I feel like we now have the other versions of Julia Child, all within the hearts of these amazing women, giving us everything pasta gives, besides a full belly! LOL! I just placed my order for the cookbook... After being given the yellow-light (not green) to allow one serving of flour-based starch, my imported flour finally arrived and I will definitely be getting my pasta-freak on!

I really enjoy your channel. I'm just observing something here she did not grind the meat filling, isn't it better for the ravioli? Whenever I make it I always make my meat filling smoother in texture

Pasta Grannies hi Vicki you were so good at replying so quickly. I guess I'm just used to the way my grandmother made them in the way I make them after the meat is cooked and the onions and spices in the spinach our combined I always pass it through the food processor not to make it like a pate but just sort ofmaking it so that it doesn't have as much texture. How fortunate you are to travel and observe grannies like that that is such an exciting job

Only industrial filling is ground, you need to taste some texture, this works for every filling.

Due to the difference between flours, atmospheric humidity, the weight of eggs, etc., in Italy we use the sensitivity of sight and hands, rather than weighing the components of the food to be made. Furthermore, family tradition matters a lot.

How do we get the receipt for exact ingredients. My mother use to make them but she never had a receipt. Also my wife used to make them. Now I’m the cook because she is sick

Spageti ravioli .is not wath just to be. i new before..alot more espagetti wiht big meet bolls .but todays days the can only got to much sauce on wather .and last espagetti. With tiny lil meet bolls on the can .the company .chage the way .. is to short..they look at peaple like stuped .last spagetti and you pay more money for the wather and the sauce....they are to short ..dont spend your money on it .no more..
