Today, I’m going to be making, Japanese Melon pan. Melon pan is very popular Japanese traditional sweet bread. The light texture cookie dough is on top of fluffy milk bread. The edges of the cookie crust is so crispy and make this bread so special. Actually, Melon pan has nothing to do with Melon. The criss-cross pattern on the surface looks like a melon. Just like that. In Kansai include Osaka, sometimes it is called “Sunrise”. Because it looks like the sun!
If you have ever come to Japan, you would realize how much we love bread. There are so many of fancy bakeries everywhere!
This is my first Japanese bread making a video, I don’t know why it took so long. I’ve been teaching baking for more than 15 years. Anyways, I hope my experience will help your bread making!
<bread dough>makes 10
200g Bread flour
50g Cake flour
30g sugar
4g salt
4g instant dry yeast
80ml milk (room temperature)
80ml water
20g egg ※save the rest for cookie dough
50g butter
<cookie crust>
25g butter
60g sugar
40g egg ※the rest of the bread dough
2 teaspoons Rum or 1 teaspoon vanilla extract
120g cake flour

These turned out perfectly fluffy and delicious! Some other recipes I tried are never quite right, but this recipe captures the taste of a Japanese bakery-made melon pan!

I went to Japan October 2018 and tried melon pan the first day I was there and it was so good I became addicted! Japanese fried chicken as well was amazing and I cannot find anything that comes close to it.

Fiancé and I went to Tokyo and loved the melon pan, it was delicious! Just tried making it and it turned out pretty well, only the dough was too sticky to roll into perfect buns. Thank you for providing the excellent recipe!

We have a real Japanese Bakery here and their Shokupan, Anpan, Curry pan, Cream pan, Agepan, Melon pan and whatever else pan is truly fantastic. However, it is so expensive, that it's worth the time to bake it yourself.

Im Mexican American, we call that bread a concha because of the shell design that is cut into the crust. The bread itself is called pan de huevo. It's hard to find a good bakery that makes them right. El Gallo bakery in East L.A. is my favorite. Your recipe looks so soft and yummy, thank you

My recommendation is to add some rum soaked raisins right into the bread dough instead of chocolate under the cookie dough. It is very delicious and gives it a bit of contrast and bite. I am not so much a chocolate fan in pastries so this is my alternative to spice up some of the melon pan beside having the plain ones.

update: I tried and this is the best recipe of Melonpan the only thing that isnt good is that we need to add more flour in the bread dough

As I mentioned in my Ham & Cheese Bread video, Japanese bread dough is on the stickier side. Try not to add more flour. You will get fluffy and moist bread.

Wait - is this the same thing referred to as "melon bread" that I have seen high school students in anime eating all these years? I can never find it in asian markets. Now I can make it! (I know it seems trite, but watching anime characters eat Japanese food is one of the primary reasons I became interested in it). And it doesn't have melon ... Looks a little more involved than some of the other recipes of yours I have made, but I am going to try it. Thanks!!

Hi, Jasper! Yes, it is "Melon bread". Bread=Pan (in Japanese) This bread is popular among all generations but especially kids include high-school students. What is the title of the anime? I am not familiar with anime so let me know your favorite! I am sure you will love the bread. And I am sure that you can make it at home if you've never tried. You have a talent to get to the point. (don't be fooled by my fondness of Anime - I'm considerably older than you are going by appearance - I just got addicted to Anime in my early twenties and never outgrew it - I still regularly watch shows that may be geared toward people less than half of my age) It wasn't just one anime. Many anime over the last decade or more that I've watched have featured one or more high school students eating melon bread, angry because the cafeteria was out of melon bread ,etc. Most recently it popped up in an episode of Natsume's book of friends. It made me crave it just because of the name. I was saddened to hear there is no melon involved, but at some point in the future when I get a chance (and am alone in the kitchen) I will give this a try. Thanks!

I'm so sorry to disappointed you.Lol. I guess Japanese melon is too expensive (over $50) to eat on daily basis. Bread is affordable even for a student and we feel like eating melon. Well there is melon flavored melon bread, but the flavor is artificial which I don't fond of. You make me want to read Japanese anime! I only watch Miyazaki anime. Do you know him?

Miyazaki is certainly a name I know. If you are only going to watch one type of anime, then the co-founder of Ghibli studios is definitely a good choice! I didn't realize melon was expensive in Japan. Anime again I guess - I recall more than one episode in which anime characters were gobbling water melon. Melon or not, I look forward to trying this recipe.

Instead of using bread and cake flour, could we substitute all purpose flour for everything?

All purpose flour makes lighter texture, in other words, a little bit dry texture. But it works fine!

The dough is relatively rich, it might take longer proofing time. The time varies depend on the temperature of the dough and the room. Maybe next time!

Looks soo good. May I ask, you have 20g of egg for the dough, save some for the cookie. In your cookie recipe you have 40g of egg from the remaining egg of dough. Please tell me exactly the measurement of egg for the dough and for the cookie. Thanks for sharing. 🙏God bless.

I've seen that somewhere (I don't know if it is common) they sell the Melon Pan with green tea ice-cream inside, did you ever try it? Is it good?

Hi, Luiz! I have never tried with matcha ice-cream in it, but it sounds good! I had tried one with custard and whipped cream. And I had tried a brioche with pistachio jelato. Both are so good and I can't forget! Maybe I should do it in the future! Thanks for watching!

Thanks for the video! This remind me of my first time eating melon bread cuz of anime(u see all of them like melon bread). So the first time i tried it, i thought they have melon taste, but they dont... Im kinda dissapointed and its too sweet(?), thats why i thought maybe this is a fake melon bread(i buy it from a new nearby bakery), but i still finished it though. Then i search a recipe(still dont believe it) and watch ur vid... So they really dont have melon taste...
