My Mom made these for years, and we always loved them. I miss Mom heaps, and at a recent trip home my brother asked if I had the recipe. I shared it with him and now I'm sharing it with you. There are similar recipes online but they may use different amounts of some ingredients. This is the way my Mom always made them and they are SO good.
Note I had relatively new mini muffin pans -- you will want non-stick pans and I would still grease them well or they can stick. I just slip a butter knife carefully around the edge and pop them out. You could try using liners, but I never have and don't know if they would stick to those.
Also note Mom's instructions: Do not double the recipe or use regular sized muffin pans or they won't turn out. I make two separate batches if I need extra - one batch makes about 24 mini muffins depending how much you fill them, how big your eggs are, etc.
INGREDIENTS
• 1 stick butter, melted (1/2 cup or 115g)
• 1 cup brown sugar
• 1 Tbsp vanilla extract / essence
• 2 eggs
• ½ cup flour
• 1 cup pecan pieces (109g)
INSTRUCTIONS
