Pecan Pie Mini Muffins
These treats are the perfect sweet, nutty bite and come together in no time. The hardest part is cleaning up the muffin pan! They are loved by everyone in my family so hope you give them a try.
Makes about 24 mini muffins
Ingredients
1 cup finely chopped pecans
1 cup soft light brown sugar
½ cup flour
Dash of cinnamon
2 eggs
2/3 cup melted butter
1 tsp vanilla
Directions
1. Preheat oven to 375 degrees Fahrenheit.
2. In a bowl mix brown sugar, flour, cinnamon and pecans together.
3. Combine butter, eggs and vanilla in a separate bowl or measuring cup. Add to the flour mixture and stir to combine.
4. Use a small cookie scoop or a teaspoon to fill the mini muffin pan with the mixture- about 2/3 full. The mixture will be thick and sticky.
5. Bake for 15-20 minutes or until golden brown.
Tips
1. I like using a silicone mini muffin pan for this recipe as the batter is very sticky and can stick to the sides of a metal pan. If using a metal pan, be sure to use paper liners sprayed with cooking spray for easy removal.
2. If using a silicone pan- let the muffins cool completely in the pan before removing.
3. Soft light brown sugar is a must! It helps the muffins to develop a beautiful colour and a caramelized, crunchy exterior.
4. Don’t be tempted to remove the muffins from the oven too early- you want them to develop a nice colour and crust. Keep your eye on these muffins the last few minutes of baking- they can easily go from perfectly golden to burnt in no time- trust me, I know.
