I didn't thinking aboutbprevroasting the eggplant I will try a lower carb version but basically this same. The only change in the bechemel sauce ( OmG I love bechemel! I love eggplant!)

I have been making Moussaka for years and mispronouncing it as well. I love the idea of broiling the eggplant. Will try method for sure.

We have in Romania this dish Musaca and we love it, but we cook different, in layers. In my childhood I saw my mother (God forgive her) cooking all the time with eggplants and ground beef. Yammy delicious !

I have made this dish once . The recipe I used called for a layer of potatoes on the bottom. Very delicious.

You can substitute butter for any other kind of fat, and the other way round, the taste will be a bit different, that's all.

I have lived on the Mediterranean island of Cyprus for 23 years. They sure know how to cook moussaka here and ive never had it, whether in a taverna or with a Cypriot friend serving it, without a layer of potato and zucchini with cheese sprinkled on top. I have made it the Cypriot way and it's delicious. ❤

Hi Suzy, my interest in Greek cooking started as a very young Uni student who had the good fortune to waitress at the Iliad Restaurant back in the day. My nickname was Bouboulina (after Bouboulina's Delight -a dish on the dessert menu). I saw many a moussaka and this year 2024, I decided to actually make your vegetarian version. Now that I've also seen the LAMB MINCE VERSION, i'VE GOT A BETTER HANDLE on how to make it. Thank you for the careful instructions. Next time I will add 1 TBSPN and not 1 Tspn of Oregano, and broil the eggplant and add the breadcrumbs which were not in that recipe, and not bake it. It was delicious by the way and it gave me a huge boost in confidence, so thank you. I love the dish as well that you use. Next will be the white Bean stove top hot dish. I am ok with fish but cannot face red meat as an ingredient.

I've ordered this dish at other Greek restaurants, the spices in the meat are never balanced, and sort of on the bland side. This lady's recipe is delicious. Every family makes dishes a little different. And like all recipes, you can alter the ingredients to fit your family's likes. Im Sicilian, Sicilian food also differs from household to household. If you prefer potatoes in it, then add potatoes! My family prefers fewer carbohydrates, so i follow this recipe fully. The bechemel is very rich & luxurious, it's more of a savory custard. I love the spices in this recipe. I haven't found a Greek restaurant yet who makes it better.

Great recipe, quick tip. When you cook the meat - don’t drain those precious juices. If you keep on cooking it reverts to fat and you get that roasty, Maillard reaction with the meat which gives it flavour

Respectfully, potatoes should be the first layer in the pan followed by the eggplant. The sauce should have grated kefalotiri cheese mixed into it with nutmeg “to taste”.
