Mung Bean Spring Roll (Munggo Turon)
Munggo Turon is a Filipino snack or dessert filled with sweet mung bean paste wrapped in spring roll wrapper that is fried to a crisp. Best served while still warm and the wrapper is still crispy. Easy and yummy!
You can choose whatever toppings you have in mind.
Ingredients:
. 1 cup green mung beans , washed
• spring roll wrapper
• 1 cup brown sugar - more or less adjust to taste
• 1 tsp.vanilla essence
• cooking oil for frying
Instructions:
• Pre- soak mung beans for a few hours in advance to lessen cooking time.
•Boil mung beans until softened. Add sugar and vanilla essence.Let the mixture simmer until there’s no liquid.
• Mash the mixture until it becomes paste.
Let it cool completely.
• Scoop 2 tablespoons mung bean paste into the wrapper. Roll and fold the ends neatly, use water to seal the edge.
• Heat oil in a pan over medium high heat, fry mung bean spring rolls . Drain on a paper towel.
• Serve with your favorite toppings. Enjoy !
