Hello Jilly G. The strawberry jam recipe I did yesterday came out oh so good. We made some for our neighbor and she loved it. I will make the GF Shortbread Cookie with coconut sugar. Thanks for a great video, I adore short bread. When I make it I like to dip the bottoms of the cookies in some chocolate. I haven't added pecans but I'm going to try that too. You do such a great job of keeping me baking!

I always add more flour if the dough sticks to my hands when I roll it into a ball. I also find that GF shortbread to have a better texture when you add an egg. Many thanks for sharing. Push that recipe book Jilly !!.....

Are you able to shoot a 15 second video advertising your gluten free cookbook, then I can just insert that into any of my gluten free recipes. I think it would be beneficial to you and easier for me. Hello! These cookie will keep best and longest in the fridge. The longest I have had them last is 2 weeks, only because they were all eaten! They also freeze well! And thank you for watching and commenting!

I tried the shortbread cookies but mine did not turn out. They tasted like sand. I added the egg white next after the first batch didn’t turn out with the egg. They stayed together but still tasted gritty. Should I use more butter? Not sure where to go from here. I even tried Bob’s flour mixture, but tasted the same. I did use coconut sugar too.

Hello!! I am sorry to hear your cookies didn't turn out!! The egg really does help with the texture. I will say that shortbread cookies are a little on the crumbly/sandy side to begin with. You could add more butter, but they might not hold their shape in the oven. I would suggest adding a little more tapioca starch ( or other starch corn or potato) to your flour mix, and that might help lighten up the flour a little bit. These cookies work great with honey too, and that might help with the texture as well. Let me know how it goes when you make them again!
