You saved my Christmas! Every Christmas by grandma bakes heaps of different biscuits (7+ types) for the family that last us the whole holiday but recently I was told by my doctor to not eat any gluten. I've been a bit lost when it comes to what I should have instead, because there isn't a big selection of glutenfree biscuits and cakes in the shops where I live, so this video is perfect! Commenting again :) So I made this recipe yesterday and I struggled with the Italian cookies. I couldn't get the dough thin enough to pipe out. I added 2x's the amount of milk and no go. They were very "gluey" and sticky, and they came out like a thin stick. I'll do something with them, like dip in chocolate and sprinkles. The other cookies turned out great. Anyway, I compared the flour blend I use (mock Better Batter blend from a different gf baking site) with yours and the mock BB has more rice flours as well as a potato flour, along with the starches. I'm not giving up, but I would definitely say Better Batter probably isn't the one to use. Hopefully this helps others :)

I highly suggest getting the items needed for Kim's blend. I've been able to find them easily in Texas and in Michigan when I visit my parents. The biggest hurdle was finding the rice flour, but I get the Erawan brand from a local Asian market and it's perfect. It's so much cheaper making my own than buying a premade mix.

@@cheripowers9924 I do actually, but I haven't tried the other rice flour they carry. I know Bob's doesn't work nearly as well as Erawan does, it's much much more grainy. The Erawan brand, or the Authentic Foods brand Kim recommends are very fine. I should try it out sometime and see how fine it is.

Kim these are the BEST cookies I've ever made. I bit into one of the buttercream frosted cookies I made and I was instantly reminded of Lofthouse cookies. I died and went to cookie heaven. The pecan squares and cinnamon roll cookies are super delicious too.

8:55 I'd call them vienna eclairs... or vienna eclair halves, for the individual piped bits I guess. I think the halves by themselves might resemble a vietnamese cookie as well, I forget the name though.

Yay! Thank you!!! Anyone know what I can use to substitute for egg yolks? (Egg allergies in my family.) After searching, I found many recommendations for Egg Replacer but I’ve had less than good results with that. It is the easiest to use so I may give it another try. I was hoping ro find something that added fat as in egg yokes. Avocado is the only thing comparable. So back to Bob’s Red Mill Egg Replacer.

I made gelatin egg. Worked perfectly, no added flavor, n added sweetness. 1 1/8 tsp powdered unflavored gelatin plus 3 T hot water blended with a frother. Easy peasy!

Trying these this weekend for my son’s birthday party! We both have celiac and I’ve always wanted to try my hand at decorating cut out cookies. Do you happen to know what brand of meringue powder is gluten free for the Royal icing? The only one I can seem to find is Wilton which doesn’t say gluten free but it seems like from searching Facebook groups a few people have used it without issue. Thank you! Yes, some of them. All of them except the filled linzer cookies (you can still make the linzer cookie halves and freeze those, and then sandwich them with the jam and powdered sugar before serving).

Thanks so much, Chantal! I'm portioning them out into 8 portions, but some of them don't get refrigerated right away. Only the 2 are refrigerated right away, the cutout sugar cookie dough and the dough for the cinnamon roll cookies. I then add any add-ins to the other doughs and either bake right away (like for the potato chip cookies), or mold and then refrigerate (for all the rest--chocolate, cranberry, linzer, etc). I hope this makes sense!

Thank you so much for getting back to me so quickly. I used Your flour blend. I also weighed it vs scooped it. I’m also glad you mentioned that you’ve cooked them ‘not cold’ because I was wondering if I left to do out too long on the counter. I cut them using the 3/8 inch spacer. I did another test at a quarter inch and they did hold their shape a little bit better, but I still got a little spread. Thoughts? PS I’ve made your pistachio and pecan and they turned out AMAZING! 🎉

Okay I think I’ve finally figured out what my problem was… I just needed to add more flour. I just kept adding until the dough wasn’t as sticky and I could make a ball in my hand. I have not tried cut outs yet but it seems to be my solution! Thanks!
