How to Make Neapolitan Coffee (Cuccumela)

In this video we're making Neapolitan Coffee or "Cafe Napoletana" - an Italian tradition using Cuccumela style pot. You can buy newer versions of these online and this isn't the ONLY way to make this type of coffee. The one I am using in this video was my Grandmother's and is over 70 years old. I've always wanted to make coffee this way. Luckily, a family member still had this lying around unused.

Hey man, hi from Italy. I make mine every day and have researched, and experimented thoroughly, and I can well say, you are truly a master ;) You're maybe the ony other one I've seen, pre-boiling the water. Which is supersmart. It prevents the grounds to be overextracted. The one thing I haven't tried yet of a million, is to click in the 'pitcher' half, when cold off the stove. It sounds interesting, after all it the coffee cools down a lil bit once brewed, it sounds good. It escapes me if you do so, but I suggest, make sure the water after boiling at 100°C, sits for 60 seconds so goes down to 96ish°C. And only then, flip it. In Italy we do so by waiting after the whole thing boils and drips the little drop from the eyelet. One more thing, it surprises me you kinda press the grounds in the filter. When i did so, it wasnt good. But i guess you do it gently. Last but most important: keep that pot on a shelf with all the love in the world for your nonna, but aluminum gets toxic after some years of use (producers now put a protective layer and recommend to replace pots after 10 years anyway). it must never be scratched. In fact, it is safest nowadays to get a stainless steel one (which will need not to be left with coffee remains inside for several hours, or it will leak nickel in turn. Still kinda less dangerous than aluminum compounds, in the long run). if you have a look around, many videos here even from historic cafès in Naples, use steel ones. Best to you! Ciao :)

I celebrate vintage stuff, especially those items handed down through the generations. Although I think my Drip-O-Lator system is easier, none of my coffee makers were handed down to me so yours is way cooler in that aspect. One thing I've learned with my smaller Drip-O-Lator that's been everywhere with me throughout my military service, is to use Mechanix gloves with it. I don't use the pot part of this three cup version and only use the reservoir and the filter part, instead using my military canteen cup as the pot. Once you put the ground coffee in the filter part, the reservoir and the filter latch together to make them one piece. After boiling water in the canteen cup on anything from a stove top, to an MSR stove, to an open fire, while holding the aluminum reservoir/filter, I pour the boiling water into it and then place the canteen cup back under it to catch the coffee. I only have to hold the reservoir for a moment as the water is going in there but, Yo diggity does it get Hot. The Mechanix gloves have enough protection to keep my fingers from getting roasted for the short time it takes to get the water in and set it down. Seems like you could do with a pair of Mechanix gloves while using yours as well. Thanks for the video. Also... after taking a look at your channel, I see you're from NY. My time in the Army has deposited me out here in the Great Northwest but I'm from Binghamton originally. I had family... Italian family... lots of Italian family living in the city when I was growing up and we had to go there a few times a year. I haven't been back since the towers have come down, but since my wife is from L.A. and has never seen the city, I have plans to bring her out this summer. It should be a good time. Ciao!

Madonna . Why are you putting it together when it is on the gas? I mean actually adding the coffee? And then at the end you place the last bit on and flip it. Not going to be boiling is it? Steam coming out of the pin hole designed to tell you when to flip it is astranger to you. Grandma ( Nonna ) would cry if you do this. I have have shed a tear and said a prayer for you , "for he knows not what he does".

@@CRtrain Mate , A Cuccumela has a very particular design . It is a design that dictates function and use. If you use it in a way it is not designed to be used that imo opinion is a disaster .

This is not how this type of coffee pot is used, and it is quite easy to scald yourself using it in this way.

Thanks for watching! I mention in the video it's incredibly hot a few times. And yes this is not typically how to use the pot but one of many methods, including how my grandmother from Naples made it.

I use a Krups Black Coffee Grinder which you can get online for $20. Sometimes I'll order pre-ground for percolator setting.

My tin pot looks as beat up as yours and it is definitely older. As many times as I've used it it never occurred to me to heat up the water and pour it into the pot. Mine is OLD. 100 years maybe?

MY GOD! I inherited one of these pots! It says on the bottom "made in Italy"! I did not know how to use it, so THANK YOU SO MUCH! My mother used to make "demitasse" coffee...espresso in tiny cups with a splash of anisette. Thank you SO much, I have that EXACT model pot, too! By the way, I am 64 and the pot was already ancient when I was a kid.

Coarse to medium.

You should use a coarse grind. If your grind is too fine, it will clog the filter and prevent the water from passing through.

Brooklyn here, I have my grandmother's pot which looks very much like yours, I have no idea how old it even is. They called it the cuccumel' which I had forgotten until your video reminded me. I want buy a new one that's not aluminum and give it a try. Thanks for making this video!

Ive seen other videos with this pot where they leave the top on while heating up? any difference?

I prefer to leave the top and the filter off while heating because I can measure the temperature of the water to exactly where I want it. You should heat the water to 212 degrees Fahrenheit, wait 60 seconds, then assemble and flip the pot. The reason you do this is to prevent the coffee from getting burnt and tasting bitter.
