INGREDIENTS WITH GRAM AMOUNTS
4 large English cucumbers - thinly sliced (can peel if you like)
1 medium sweet onion - sliced
1/4 teaspoon white pepper
3/4 teaspoon salt
2 cups (480g) white vinegar
1 cup (240g) cold water
1 cup (200g) sugar
2 tablespoons fresh dill - minced

Often the cucumber skins will be removed and the slices or chunks are thicker. Regardless of the shape, the flavor of this salad is spot on. The ingredients are in the written description. You can also use a cheese slicer intead of a mandolin, for the thin slices :)

I made this for my Brooklyn born hubby. My homegrown cucumbers, onions and dill. He almost had tears in his eyes. He said “I feel like I’m on Flatbush Ave. again.” Thanks for the recipe.

Who knew a cucumber salad video would make me cry! My father (may he rest in peace) used to make this salad especially for me. I miss him so much 😢 but seeing this father and son bonding over good food is a tender, lovely moment in the middle of a chaotic and often cruel world. I’ve been eating cucumber salad this way for 67 years. My grandmother, my mother and myself all make it this way. It never lasts very long in my house. I could probably make this 4 times a week. Thank you for the great video.🙂

My grandma used to make "cucumbers and onions" Equal parts vinegar sugar and water. We absolutely loved them and all of us kids still make them to this day

Yes, this is how my German Grandma made her cuke salad. She'd use a paring knife, while holding the cuke and got those slices THIN without a mandolin. :o)

Hey Jim. When I make cucumber salad (or other marinated dishes) I just put everything in a zipped food storage bag. I flip it back and forth to coat everything and turn it once or twice during its resting time. ❤️😎 Definitely going to try your recipe.

I avoid putting food in plastic (just me, but Google) covering it is okay as long as the plastic wrap isn't touching the food).

My family makes it just like yours, but they drain “most” of the liquid the next day and add approx 1 cup of sour cream. Delicious.

Strange I grew up on a dirt farm in eastern ks, I made it this way and I had never heard of new york style deli cuke salad!! lol I love my sugar in hot wilted salad with green onions and lettuce too! 1

Slice the cucumbers like you did, add them to a jar sterilized with boiling water & emptied, make a mix of vinegar & sugar, 1:1, cold, just keep mixing, it will dissolve... Add salt & pepper to taste, and pour over the jars, lock them up & keep them for at least 2 days in the fridge before tasting... Holds for a very, very long time :)

German here - that's just the way my mom used to make it, just with way less sugar. But apart from that, cucumber, onions, vinegar, salt and pepper. Great as a side to stewed dishes like Rouladen, the tartness cutting through the rich sauce.

My all Italian mom used to make this for my all German dad. No sugar at all tho. (And yes, when they married in 1957;it was considered scandalous.)

I agree on the less sugar. I don't remember it ever being so sweet. I guess back in the late sixties, early seventies, they were not as crazy with the sugar. People were a lot thinner back then, This could be part of the reason.

I have to say James is the luckiest kid on the planet. While I didn't have a chef father, I had one who kept insisting that I try everything (and I think I was his age when I surprised my father by ordering the frogs legs because I never had it before). I work now with people who haven't tried this or that and don't want to try it. Unfortunately, I lived just far enough down on Long Island that I mostly missed the city deli scene. The cucumber salad looks fantastic.

Am absolutely loving your NY salad series! Our Italian-American family lived in Brentwood many years ago but German deli food was a staple in our house. My sister and I are now 60-something Long Island expats (I live outside of Washington DC and she lives in St. Louis Park, MN.) I also thought James was in his teens and I feel kind of bad cuz I initially thought he was a typical teenage sneaker head but that’s definitely not the case. Thank you mom and dad for all you do. On another note my great grandfather always said to use a cutting glove when using a mandolin. He was a time traveler

I’m from the South, and in the summertime, we always had big jars of sliced cucumbers and Vidalia sweet onions in the fridge. The ‘dressing/marinade’ was vinegar, sugar (not nearly as much as you used though), black pepper, salt and water. This was a constant during the Summer, and always my favorite.

Amazing that so many cultures have a variation of this recipe. In Denmark we call it agurkeslat, typically doesn't have onion and uses a lot more sugar. But I tried this version yesterday, and I really liked it. Normally I don't care for uncooked onion, but the pickling process makes it very enjoyable.

I remember seeing James mow down a shrimp dish you made and it was hilarious seeing him dive into it. Hearing him eating the salad with the crunch and desire to finish it was nice to see. I love this salad as well but I also like dill.

I make this "quick pickle" cucumber salad which is similar: Cucumber Salad 1 cucumber 1/2 a small onion 1/8 to 1/4 cup sugar 1/4 cup red wine vinegar 1/4 to 1/2 teaspoon dried dill Peel cucumber and cut into thin slices. Peel onion and cut into thin slices and combine with cucumber. Bring to a boil the remaining ingredients and then pour over cucumber and onion. Chill.

i think we have always thought "the taste tester" is older because he is so well spoken and personable.(takes after Both parents!) i love this Cuc Salad!. i love to try new recipes. my fam, UNFORTUNATLY are boring and only my 20-year-old Cuc Salad recipe based loosely on a Japanese restaurant nearby will do for them. oh well more Sip and Feast for me!!!

I Use lemonjuice, white balsamvineger, canesugar, dillstems finely chopped mixed cold, cover, in fridge over night, adding the rest of the dill before serving. Pickled cold salmon, freshly cooked new potatoes and a Shrimp mayo with lots of more dill. Summer classic

Delis also used to offer German/Jewish "Gesundheit" (health) salad. It was a mixture of sliced summer vegetables (cabbage, bell peppers, celery, radishes, carrots, cucumbers, onion) that was dressed with a dressing of vinegar, oil, sugar, salt, and garlic powder; and then packed into a big jar or a crock. Each of the peoples of central and eastern Europe (Germans, Poles, Hungarians, Russians) have their own variation of this salad.

My southern grandmother made a similar thing often with vinegar and salt, lots of black pepper and maybe garlic powder later in life. No onions in this, but we would eat them with a slice of raw Vidalia onion and fresh tomato along with supper. She would make them in the morning and put them in a glass container in the fridge all day. Fried chicken, pinto beans, cornbread with these, onion, and tomato made a meal that I would take over any Michelin star meal, especially if it was made by my grandmother

My parents, grandparents made “cucumbers and onions” in a very similar way. The only exception is Mayo added to the vinegar and sugar.. and it’s really good.

Love this! For years, I’ve been making cucumber salad for my mother, trying to approximate the way her German grandmother made it 70+ years ago. Your video immediately showed me what I’ve been missing. (I’ve been using only a spoonful of sugar and slicing the cucumbers way too thick.) We’re from DC so I had no idea this was a NY Deli specialty.) Can’t wait to make your version for my mom! JAMES: You absolutely have plenty of charisma! Jim, try using a gallon size zip lock bag for marinating anything. I'm not kidding. You can massage the food and the marinade or brine. Squeeze the air out of the bag and seal everything inside. It's easy to turn over, and fit on a shelf.

Been making cucumber salad dinner I was a kid with cukes out of the garden. I love my mandolin now, but I used an old fashioned box grater for cucumbers for many decades. Works great for cukes on the slice side and no where near as scary to use.

I'll be 72 next August (I look forwards), and my mom would make Cucumber Salad for us back in the day. Don't think she put dill in it, or black/white pepper, but I always liked it. I liked the spinach she put on the table too. I was the odd child. LOL

When you serve stuff like this, you're always left with a lot of liquid. I often use it again, as long as it's clear. Put it in a pot with thinly sliced cucumber, put on the lit, give it a shake, store in fridge.

You can also do that for Asian style cucumber salad recipes (garlic, cilantro, seasoned rice wine vinegar, oil & a bit of roasted sesame oil).

alternative for better taste: add salt sugar vinegar to the cucumbers and mix. After 1 hour rest press between hands to let it loose some cucumber juice. You can add flavors like fresh dill or crushed minced garlic, but basically you are done. Same ingredients but as no water is added the flavors will be more concentrated.

AND..... you can drain the liquid once the marinating is done and ADD SOUR CREAM. Cold on a hot day the creamy sour crunch is divine!

Ok this is like old fashioned cucumber salat here in Germany. Have seen this anywhere for quite some time. It s nice. I used to like it as a kid. Good in the summer when the salat is cold from the fridge. Using yogurt and much less vinegar is also very,very good

I salt the onions and cucumbers while in a strainer for an hour to release excess moisture. Mix 'em all in a plastic zip lock, And sometimes 1/2 tsp celery salt. Serve in a bowl, not a dish. Sweet and sour freezing cucumbers, we call them.

I've never been tona NY deli but have eaten this my whole life in the south. We like our cold sides, especially in summer when it's one less thing to have to cook when it's 98 degrees with 90% humidity. I always make this when I make hot wings too- helps to cool the mouth off a bit so you can chow down a few more spicy wings.

Thank you for this. I made it for my wife today. She had me add a few slices of red bell pepper to a seporate container of it to try that way and she said the red pepper made it even better.

My German mother uses tarragon vinegar and just a teaspoon of sugar, no onions and peels the cucumber.

For American country people, this dish has been around forever. I am 71 & can remember grandparents & great grandparents making this. They even mentioned earlier relatives making it & they didn't come from the east coast per se. Dude, this has been around forever & not necessarily with the sugar.

I grew up on eating these Deli salads in Brooklyn. Mom would buy them all the time after work, delicious!

This reminds me of a dish my dad made in the summer when his garden was full of cucumbers. He filled a large mason jar with sliced cucumbers and onions which he then covered with a mixture of equal parts sugar and white vinegar till the liquid covered the veggies. Lots of black pepper and a little salt. As the level of veggies decreased he would just add more cucumbers and onions till he felt it was time to start a new batch. He called it “pickled cucumbers” because they weren’t pickles exactly. It’s was delicious.

DELI DRESSING (4 servings): My basic recipe for deli dressing is very much like yours. Whisk together 2T vinegar, 2T sugar and 2T mayo. Recently I was experimenting to match the flavor of a great store-bought macaroni salad. I settled on 2T vinegar, 1T+1tsp sugar, 2T mayo and 1/4-1/2tsp curry powder. It's such a full, rich flavor with less sugar.

Grandma from West Virginia called this Quick Pickle, served it in summertime. I carry on the tradition, my Italian/Polish girlfriend loves it. I should make some for her dad he's from New Jersey.
