in north we don’t use uda and alligator pepper, we use kulli kulli , cayenne pepper, masoro( black pepper) ginger maggi and salt, its the proportion that makes it taste different, and everyone keeps it a secret, we call it yaji

Looks so good 👍. Quick tip for the alligator pepper/uda, Try to beat it and remove d seed before use. It doesn't make it bitter that way. D seed is what makes it bitter.

That's true. Though that's not alligator pepper. It's a spice we use in making pepper soup in Nigeria. Alligator pepper is different.

Love your recipe. 2nd time using it this year. I found the thinnest beef cut is shaved beef. Very thin and you don't need to tenderize as much. I also used peanut and vegetable oil.

Once I saw the Uda and ehuru I almost cried. Where will I get it here? The recipe looks delicious!! I have given up on trying to imitate the aboki flavor, now I just want suya that tastes amazing! Last month i had the pleasure of tasting egusi, tapalia and jollof from and place in Chi-town . I was impressed. to a point now i want to try more NIgerian cuisine, that's how I came across your video. I'm going to try to make suya and egusi. I'm South African and must say. I will let you know how it turns out . I have a NIgerian friend who will tell me if its good or not. He took me to the place in Chi-town I trust he's taste buds.

As a young bachelor I’ve been able to make jollof, egusi and stew from your tutorials which has helped me save a lot of money that I would have spent ordering food. I learnt that the seeds are what gives udah the bitter taste so, you are good to go if you get rid of the seeds.
