My Mother was from the mountains in Western North Carolina and she would NEVER put Ketchup in her Cole Slaw, but she would never serve barbecue sandwiches without Cole Slaw! Good video, thanks for posting!

Cole slaw is very popular thing in Pennsylvania also. We also have a PA Dutch item called pepper cabbage also. Lots of great PA Dutch dishes and creations

I'm from NC. Your slaw looks good! (We do not put any mayo in our slaw). Red wine Vinegar and brown sugar. But, i like the bit of carrot in there. We add finely chopped onion and celery plus celery seed. I like it every way. Maybe not with ketchup! Lol

at my moms house (in Michigan) the core of the cabbage was the reward for the cabbage shredding guy. 11 kids plus relatives your talking 3 or more large cabbage worth of shredding but those cores were so worth it for a hungry kid. slice and salt and i was the luckiest girl in the kitchen chomping those salted cabbage cores. i'd share but being the boss of the treat made me queen.

I’ve had Eastern NC coleslaw that tastes like it has a bite, maybe horseradish? Also tastes and looks like it has some sort of sweet pickle mixed in. I think it was from either Wilber’s ((Goldsboro) or King’s (Kingston). The best slaw ever!!

Hey Jerry. Great job. Good info. Liked & subscribed. One thing though. I’ve lived in WNC (Asheville) all my life (68yrs) and this is the first time I’ve ever heard of ketchup in kole slaw. Must be some new wave chef thing. There are a lot of those around these days. : (

Is that the battle between western N.C. & Eastern N.C. Barbecue? 30 to 40 miles up the road to Salisbury or Lexington. I like both Vinegar and mayonnaise coleslaw on hot dogs and hamburgers and of course Barbecue

I like this . Just carrots for sweetening no added sugar and mostly cabbage not an equal amount of Carrots with Dukes Mayonnaise. It has a different flavor than something like Hellmans yuk.

Yeah, I would had your nasty. Ketchup in Cole slaw? It's just another rumor. The fact you used dukes makes me so happy. I'm so tired of people in NC using the nasty ass miracle whip. My step dad is from Michigan and only uses miracle whip. I can't do that sugar, it's like eating straight syrup. To me your slaw looks really good. I only eat one kind of slaw, and I approve of yours! And for the bbq , (yes I am born in Durham, raised in NC) I do not like any bbq sauce, but pulled pork yes! Exp on tacos. I only like slaw on hot dogs, brats, and pulled pork (not bbq, no bbq sauce on it) but I have been craving slaw out of no we're so here I am. :)

The question you ask of each dish, each recipe, each lunch and dinner, each spread, is: are these foods good side dishes for Cole Slaw? If not, change your plans. The Cole Slaw first, then, the carriers for it. Nothing carries Cole Slaw as well as barbecue. In the beginning, I suspect, the Lord made Cole Slaw; then, He saw it needed a perfect helpmate. So He made barbecue.

Viewers please realize there is a huge difference between Eastern NC and Western NC food fixins. This recipe in the western region is totally different and so is the BBQ sauce .

Absolutely DO NOT PUT KETCHUP. I live in Eastern NC and can confirm, slaw does not have ketchup in it. We do not call it coleslaw, we call it slaw. Well.. maybe some come call it coleslaw.

Excellent tutorial other than it's about 5x too long. You shredded cabbage for 10 minutes, and then you added "a special mix of vinegar and some other spices." ???. You did better than I could, just think it could be as good at 3 minutes.

He lifts the cabbage up every time he ends the stroke . I have never seen it done like that. I just swish it up and down . Thats is similar to hacksawing. Who in their right mind would lift the hacksaw blade up at the end of the stroke
