I'm from Michigan, and when I was a kid, working with my Dad in his excavating business, one of our favorite lunches was getting a ring of Farmer Peet's pickled bologna, a loaf of Sunmaid Raisin Bread, and a quart of chocolate milk. Oh my! The ultimate in sweet and sour lunches! All the small grocery stores had a big glass jar of pickled bologna sitting on top of the meat cooler/counter. I now have to make my own as I am pretty particular as to the recipe for my pickled bologna. It is nice to see I am not the only one who loves pickled meats.

Thank you sir. I am looking to make my own pickled bologna and yours popped up. As a young man, back in 82, I was working construction, three counties away. Barely pay for gas much less food. On the other side of the parking lot was a liquor store. If you bought something, the old guy would give you a piece of pickled bologna and 2 small pickled eggs and some crackers. Me and a boy I worked with would go there, get a Big Red for 50 cents and he would give us lunch. Thank you for the memories of that little country store. God Bless and stay safe.

I like using the Mrs. Wages Kosher Pickle Mix and Hot Links smoked sausages. I stick a knife through the sausages so the juice will soak into them. I fill the jar with Hot Links and onions and put the jar in a pan of water on the stove to heat up. The pickle mix is added to 7 cups water and 3 cups vinegar and brought to a boil. After it has boiled add it to the jar which is already hot in the pan of water. Take it out and put a cloth over the top until it cools and then put the top on the jar. As it cools the sausages suck in the brine and it makes them more flavorful and the onions are really good.

I let mine cool, and then I use my vacuum sealer jar attachment, and vacuum seal the jar, the vacuum allows the wieners to expand and allow the brine solution in. I make 1 quart jars of wieners and veggies for family and some friends, but mine are made SPICY!!

I have been looking for pickled sausage recipes for a bit now that do not require refrigeration. I cannot find it anywhere. I notice in yours you dont require it, but you show in your video a piece of bologna that is above the liquid level in your jar. And your jar is not sealed at all. It was the first piece you pick out and eat after the 10 days. Am I missing something? This is not a good thing, especially if not refrigerated. All the meat must be under the brine and not in the open air space. Love the simple recipe, but would be worried about the pieces that are not fully under the brine

I love me some pickled Bologna but dude you need to be careful you used a lot of unsafe canning processes, I know it was plenty acidic and there was a lot of salt but you could still end up killing your self or others. At the very least they should be refrigerated.
