Welcome to Bonita's Kitchen! Today we will be making Pickled Eggs and Pickled Wieners.
Use hard boiled eggs and cooked wieners or sausages of choice!

Pickled Eggs
Ingredients:
8 or 12 Large Eggs 1½ Cups vinegar
1 Cup Water ½ medium Sliced Onion
1 Celery, chopped Pinch sea salt
1 Tsp Pickled spice 2 Bay leaves
½ Tsp sugar
Method:
1. In a large boiler with water add your eggs and boil for about 15 minutes until hard boiled.
2. In a medium boiler add the rest of your ingredients and start to boil until it starts to boil then remove from heat.
3. Drain all the hot water off your eggs, then place in a bowl of cold water. Peel egg shells and place eggs in a bowl.
4. Place one or two large mason jars in hot water with lids and tops for a 5 to 10 minutes, remove from water, add your eggs top with your hot vinegar mixture. Be sure to evenly add the hot onions, celery and pickling spice in each one.
5. Dry rims and cap each mason jar, make sure each one is sealed and kept at room temperature until cool.
Pickled Wieners
Ingredients:
8 or 12 Large Wieners 1½ Cups Vinegar
1 Cup Water Pinch Sea Salt 2 Bay leaves ½ tsp Pickling Spice
½ medium sliced onion ½ tsp sugar
In a large boiler with water, add your wieners and boil for about 15 minutes or until cooked.
In a medium boiler add the rest of your ingredients and start to boil until it starts to boil then remove from heat.
Drain all the hot water off your wieners, then place them in a bowl.
Place one or two large mason jars in hot water with lids and boil for 5 to 10 minutes, remove from water, add your cooked wieners, then top with your hot vinegar mixture. Be sure to evenly add the pickling spice and onions in each one.
Dry rims and cap each mason jar, make sure each one is sealed following the sealing guidelines, The remove from hot bath and kept at room temperature until cold to room temp.
Store in the fridge until all are eaten, be sure to label and date each jar.

I just pickled eggs yesterday and except for the celery (I use celery seed) the recipe was the same. Now I have to pickle some hotdogs as I have never tried those. When I was little my Dad would stop at the VFW for a beer after dropping off a load of grain and as a treat we could have a pickled egg from the gallon jar behind the bar. Dad (avery frugal man) had the bar save the brine for him and he would use it to make his own pickled eggs. My Gram raised egg layers and we always had a lot of eggs.

Oh my that is so wonderful, I'm so glad you made our recipe, the pickled eggs I make often and have in a toss salad or the egg topper for my potato salad. pro tip from south Louisiana....those eggs are amazing in an egg salad...cut it about half and half with regular hard boiled eggs..... They really shine when you make deviled eggs. The kid's call em deviled devils. = )

You're funny saying you're not a decorating type girl and your kitchen looks carefully and beautifully decorated for a video. And a great recipe, too? You're too much. My mother would always make pickled beets. I would save the liquid and just put in boiled eggs.

Hello my dear Bonita, really enjoyed your recipe for the pickled eggs and wieners, cant wait to try it! As a misplaced son of Newfoundland(stuck stateside in Georgia) it warmed my heart to see your video! How I long to be back on The Rock in St. George's, to take a stroll on Sandy Point (where my maternal relatives are buried) and visit the old lighthouse, or go jigging for cod in St. George's bay, or grab a fly-rod and try my luck for a nice salmon in Flat Bay Brook. Such are the cherished memories of my youth of a magical land that I long to revisit...

HI and thank you so much for your lovely message and for visiting our channel, it is so nice to read your lovely message. I've never been to St. George's Bay but it sounds like a lovely place. We lived away for 30 years in Northern Canada and everyday we longed to be home in Newfoundland and to smell the salt water air. I love sharing our cultural meals with the world to see and of course to reach out to follow Newfoundlanders that would like to have a little taste of home. This recipe reminds me of old christmas from yesteryear, and I can remember my Dad so excited to make these delicious savoury treats for our visitors to enjoy with a sip of rum or syrup. @@sky.the.infinite 🤣 forgot all about the pickled weiners! Feels like three years ago! We enjoyed them at first, but I probably made too many. Hubby liked the smoked sausage ones and we always like the pickled veggies too. As with all pickles, I enjoy a little and can leave the rest for hubby. I hope you made some too!

Never come to Bonita's Kitchen that I don't learn something. We make pickled eggs but haven't made pickled weiners although I know of them. I remember when I was a lad me Da would take me to th juke joints with him and they always had a big jar a pickled eggs but they were the most beautiful color. My Kathy's family always made pickled eggs and put just a bit of beet juice in the pickling and it turns it and the eggs the most beautiful pink. I told her about the celery and the next batch we make we'll put a celery in them. Also, she leaves out th sugar and puts in a peppermint stick and salt. We love em that way. The thing about pickled eggs is they're like potato salad; ya can make it so many different ways. I'm thinking pickled eggs and weiners along with yer pumpernickel bread would make us a good lunch in the shop when we don't want to stop work for long enough to cook. We both love yer channel.

I remember my chickens suddenly lay 75 eggs over a few days. Pickled eggs, that honestly didn't last very long. I just love pickled eggs, but I will try this recipe as it looks so good!

This is a lovely party snack food, my dad at Christmas time would put the bottles on the counter with a pair of tongs in the bottles with a bottle of rum on the side. This was for anyone that came for a visit and wished to have little drink and a pickled egg or wieners, Its still time to make it for Christmas and the pickle eggs are amazing in a toss salad. :) Enjoy Bonita

Try substituting pickled beet juice for the straight vinegar. Beautiful pink color. My favorite.

Pickled eggs is my favourite, I add them to a toss salad on top of a potato salad and just with salt and pepper over them. So tasty! :) Take care....Bonita

Beautiful, my mom made her pickled eggs with the picked beets juice when the beers were all gone from the jars, I wish I played closer attention. I'm going to make yours for my grandangels,their dad was from Grand falls/Windsor. Blessings🙏

miss Cndnwoman Look up Rosy pickled eggs in the Better Homes and Gardens older edition. Prob online. Just beet juice , some pickling , spice and add more vinegar. Made a quart jar yesterday

These were a childhood treat, dad made the pickled hot dogs & pickled fish. Mom made the pickled eggs with dill. Take your egg salad sandwich up notch by using one pickled egg mixed with the other eggs - good eats! Love your channel.

I respect that this is the "family recipe" and it looks yummy.... I can think of many variations that could be done to cater to people's individual tastes or for variety.... Could add just about ANY vegetable to add interesting flavors such as peppers to spice it up... carrots, green beans, radishes, baby corn, beets, garlic etc. could be added and, of course are also wonderful to eat as well... and don't forget cucumber also (truly "pickled" eggs hehehe)

I make my pickled eggs with fresh dill, onion, green pepper, 1 to 1 vinegar and water, salt and pepper. It's very good. I'm gonna try the pickled wieners tonight.. thanks for the recipe. 😘😘

Well....I did it and made one bottle of pickled eggs and one bottle of pickled weiners. Had to use different bottles but they worked out just the same. The weiners came out good. The eggs were not as good (followed recipe exactly for both). The brine was weak for the eggs. I finally decided to pour about 1/4 of the brine out of the eggs after they pickled for about a week...and refilled with straight vinegar. Still not quite how I like them so i will be continuing my pickled eggs recipe search. It seems most people on here had no prob...maybe i just like a stronger flavor, so please don't be offended! Weenies came out well! Thanks for sharing, Bonita!

You can always give the eggs another go and make it separate and while the warming of your ingredients are happening you can double the vinegar or maybe use a different vinegar there's no harm in trying. Very interesting. When I was a kid I’d see pickled eggs always out on counters of mom and pop type food stores. They were purple and I wouldn’t touch one because my mom was worried about food sickness or whatever. But I would try these and it makes sense to keep them in the fridge. I also saw sausages. I did have one of those. It was good but very spicy hot.

B Lawson This is true, even now in store here in Newfoundland they keep them on the counters and at the end of there day put them I the fridge. I don't agree with that, safety first and then no one gets sick from them. They are lovely and I like using the pickled eggs in my toss salad, thanks again for your message. :) Bonita
