I sent this recipe to my cousin and she made it. This was by far THE MOST DELICIOUS pumpkin butter I've ever had! She did tweak the recipe though a little bit by adding a spicy maple syrup in place of the regular maple syrup and cayenne pepper. Plus she used fresh pumpkin in place of canned pumpkin.

I take my jams off the heat WITH the splatter screen on before I do the “occasional stir” thing, then return it to the heat after stirring. My grandma always did that. It’s still not 100% splatter-free, but there is definitely a SERIOUS reduction in the violent off-gassing of your…reduction.

Hey, chef! In Brazil we have something similar. "Doce de abóbora", which can be served in two forms: hard candy or something like pumpkin butter (the soft, spreadable version). Sometimes we put coconut into it. Also... There's something called "cocada" - and it's delicious. Usually served as a hard candy, it is made from fresh dried coconut pulp and sugar :)

This really would be a nice thing to bring to a holiday party. Also, people are often so focus on Thanksgiving dinner that they don’t think of any other meal that day and this would be nice to have for a light breakfast Thanksgiving day with toast, croissants and a little fruit on the side.

I actually found the Trader Joe's pumpkin butter to be much too sugary last year, to the point of it being gross. This year they're calling it "pumpkin spread", so something's definitely up. The ratio here sounds much more sensible.

Welp, u just made my mom's day. She has been looking for a new recipie for this cuz the one she was using was not very good. My jaw just dropped with the possibilities of that. Try candied ginger in a chocolate tart. You can put very small pieces in it for a surprise. You can also put some in the crust, but tiny. I like the hint of it. Plus keeping carbs down for keto. Your suggestion sounds very good. How would you keep the pumpkin from squirting out as you bit into it?

Cinnamon rolls with this as the filling. Maybe add some cinnamon to the dough. Then cream cheese frosting with some added to the frosting.

If you do wanna use fresh pumpkin, roast them until they’re soft, scoop the flesh out, blitz up to a purée and add to a pan, along with the other ingredients.

Usually I just put pumpkin, peeled and cut into chunks, into a Korean microwave steamer pot. After a few minutes by 900 W you can turn the pieces in a fine mash, using a blender. The purée can be roasted in a pan to reduce liquid and to add some roasting notes. We don‘t have canned pumpkin purée in our grocery stores available. At the moment I am buying some new variety as long as there are any, blueish green colour. Tastes like sweet chestnuts, amazing. This should be perfect for something like pumpkin butter.

I would suggest using a pumpkin or butternut squash instead of canned for the crockpot, but yeah, should be similar.

This with some really buttery crackers (like Club crackers), or some form of pie dough crackers or chips, would make a really nice chips and dip for a Halloween party and/or Friendsgiving where you don’t wanna bring something super heavy, but still delicious. I can also see this being a nice Autumn gift to neighbors if you have a good canning setup. Yessssssss! I've made pumking butter last October and it wasn't all that and a pie. But I have high hopes for this recipe because I'm obsessed with the apple butter 🥰 Edit: Also I can highly recommend the splatter guard because of a reaaaally bad burn on my hand I walked up to the pot to turn it down and it got me from like 4 feet away be careful with thick sugary reductions yall.

I did a double batch of this recipe today after watching the video. I can’t wait to try it tomorrow on my toast. The cooking down process was interesting, hot lava indeed! I went with a double splatter screen and still had speckles of pumpkin everywhere. I also took Chef John’s advice and work an oven mitt while stirring. I thought maybe a welding jacket may be better for next time. Haha! I think I will do the Apple Butter recipe next. The slow cooker method there seems pretty chill.

Canned pumpkin puree is not sold in Australia that I have ever seen. Pumpkin is mostly eaten as a savoury, roasted vegetable.

Splatter guards! I forgot about those! My dad used to have this giant, ancient, made in america one that he used for most of his life and then lost it. I forgot about that thing, we used to use it all the time when i was a kid, mainly for frying up copious amounts of bacon which was traditionally done shirtless in my family since we're all pretty fearless and/or suicidal
