Panang or Masseman curry are my favorite foods of any culture let alone Thai. I could eat either of them 3 times a day for the rest of my life and would never get sick of them

The written instructions tell us to "discard the water." But let me tell you all what a *smart* cook does: after you've added your beef into the pot of water to simmer, add a cut up onion, two medium bay leaves, a cut up carrot, a teaspoon of whole peppercorns and a very small piece of star anise. Cover and simmer the beef until it's tender. When your sauce is ready, take the beef out and boil the simmering liquid down by about half, then strain out the solids. You now have a pretty decent beef stock. Waste not, want not!

Thanks. I was wondering why they did not add anything to the beef before boiling. Wasted opportunity to create stock after an hour of boiling.

I always have a bay sleave tree in a container or in the back yard ! It is so easy to grow ,, very good job for the beef Curry 👍🏽👌🍴

Why not use panang curry paste? It's so much better than red curry in a panang curry. Also, I used 2 tablespoons Red Boat fish sauce. So good either way I'm sure.

Pro tip: Chop kaffir lime leaves AS FINE AS POSSIBLE as they are very tough to chew.

The kefir leaf is not stopped to be eaten, it's just there to impart flavour. Cutting it fine will over power the curry

@@ChronoSama You're not supposed to eat it only when it's used as a whole, like in soup. But it's meant to be eaten when it comes finely julienned.

And as they said in the video, cut out the central vein. As others have mentioned, kaffir lime leaves can be used like bay leaves; used whole and removed before eating. If that is done, you might need to throw in an extra one, since the recipe was created to include a julienned lime leaf, which would contribute more flavor.

This turned out so well! I substituted chicken thighs for beef and added the cut up thighs to the red curry paste that was cooking for 3 minutes and sautéed the paste and thighs together for another 5 minutes before adding the coconut milk and fish sauce. I also added some bite-sized red bell peppers towards the end along with the cut lime leaves. Simple recipe that yields delicious results for a quick weeknight meal. Well done!

Made this tonight with a side dish of - olive oil garlic asparagus tips and spinach sauteed - it was soooo good. I didn't have the lime leaves, so just grated some lime zest and then squeezed some lime on top of my bowl, and it was awesome!

Made this tonight. Followed recipe exactly. It left me underwhelmed. In future, I would : 1-salt the beef water 2- double or triple the amount of curry paste 3-use low fat coconut milk( less fat floating on top of finished dish, hopefully) 4-add a heaping tablespoon of peanut butter toward the end 5- simmer the beef in the sauce longer, and maybe hold to eat the next day to let the flavors marry 6-definitely add more chili

If you’re using lime and lemon zest instead of the kaffir leaves , ive found the mixture stays together better by adding it in the initial frying of the paste . Whenever I tried adding the zest to the mixture with the coconut milk, it would separate . I also added a table spoon of chunky peanut butter with the coconut milk. Tastes amazing.

We use lime leaves off our line tree. We rip them open a little to get more flavor but we remove before serving like a bay leaf. I'm sure a leaf from a lemon tree would work as well. Give them a smell, it should smell pretty good. I've used kaffir lime leaves from the thai market and our home grown and honestly can't tell a difference.

Carol Hamilton Which parts of seafood are you allergic to? Fish sauce is so fermented that it might be worth calling your allergist to ask if it still has the dangerous bits.

Other the Dave, My husband has massive food allergies, and continues to get more. He grew out of them at 17 and back into them at 39 much worse as doctor told him he would. There was a time he could eat sardines but, that has long passed. Cantaloupe allergy turned into all melons and Kiwi. I have to read ingredients on everything every time I buy things as ingredients change a lot. He is also allergic to all poultry, corn, melons, bananas, rice, peas, etc. they even put corn derivatives in salt etc.

Carol Hamilton Wow... 😱 What _can_ he eat? Is gluten ok? It sounds like he’s gonna have to go on the vitamin pill diet or something if it gets much worse. Best of luck with the doctors. I can’t imagine how hard it must be on both of you to maintain the vigilance needed.

OtherTheDave actually the internet has made some things easier. Some fast food places list their ingredients, so I know what he can eat at Subway or Pizza Hut and a few others. Therefore on the road we can occasionally stop to eat, yet we always have food with us. Salt and pepper in the glove compartment. With the high fructose debate many ingredients have changed for the better. In the past I had to bake all our bread, ketchup and buy bags of potatoes to make and freeze fries and potato chips (which are some of his favorites, he could almost live on beans and potatoes, me not so much) I can now find some of these he can eat. We don’t eat out unless on the road. Corn is the hardest as he is allergic to it and it’s derivatives such as dextrin, multidextrin, etc. I mean they put it in most foods. Most sugar substitutes are made with corn, not to mention that most corn is also GMO. I have a garden and can and dehydrate food. Luckily many weeds are both edible and medicinal. My husband can graze on the lawn. I use dandelions, plantain, flowers we use lots of garlic, onions, spices vegetables and fruit (except melons). He also tries to stay away from refined foods, nitrates and nitrites. Shopping isn’t just run to the store. I buy things he can eat in bulk as next time, they may have changed the ingredients. Thanks for trying to help. I may check out the other reply on vegan fish sauce and be sure it doesn’t have other things he can’t eat.

Its my understanding that "kaffir" is a derogatory term for black Africans in southeast asia, thus it would probably be better to primarily refer to these as "makrut lime leaves" and maybe have a note that they are also known as "kaffir" en.wikipedia.org/wiki/Kaffir_lime

Please stop doubling up on commercials. I will watch one, but not two. I partially understand the need for advertising, especially with small creators, however, the amount of advertising being crammed into these videos is getting ridiculous. It was bad enough when the videos started getting interrupted midway, but to also double up the commercials is aggravating.

It looks very similar to the majority of recipes I've seen. Using panang curry paste would have been better certainly. But other than that, would would you do to make it better live up to the name of panang beef curry?

laReina Diondra well first off I would have used coconut oil as the base instead of vegetable oil. Second is you have to take red curry paste and add ground peanuts, cumin seeds, and coriander seeds to it to actually make it panang curry. Other wise it’s just red curry. Also it needs peppers in it.
