Our family had a version We called "peach stuff": combine a cup of flour a little bit of salt in a stick of butter and press it in the bottom of the pan. Cover it with drained canned peaches, a cup of sugar and some cinnamon. Bake at 350 for 20 minutes. Then remove and pour on top a half a cup of the peach juice and 1 beaten egg and a can of evaporated milk. Bake for another 30 minutes. Just as good.

Interesting take on chess pie. We still make my grandmother’s recipe, especially around the holidays. We often serve it with a scoop of vanilla ice cream. I think that would work just fine here.

I made this recipe. And although I think the recipe called for 2 peaches, I used 1 more, and made the custard at 1 1/2 times the recipe called for, and the result was excellent. Chef John, you are amazing. This is a really good Pie. And super easy to make.

If you don't have pie weights pennies work great. They conduct the heat to the crust and help with the browning. And speaking of evenly spaced that would describe me in the 70's.

Chess pie is a personal favorite of mine. Easy to make, needs no mixer, and all the ingredients are usually on hand. The peaches are a nice variation, but don't neglect to try the pie without them. If you've never had chess pie, with or without lemon juice added, you've missed a treat.

This is my first fail for a pie. I was so excited to bake it. My son bought fresh peaches on the same day that I watched the video. Obvousily I missread the recipe. As I was doing my mise en place, I read 1 cup of white vinegar and 1 cup of white sugar. so when all my ingredients were ready. I started the mixing. adding my white vinegar to the mix. bake the pie. let it rest in the fridge and served it after diner. My son said what the heck. what have you put in it. tasting like vinegar. So i tested it. Beurk what a fail. Next time I will take my time to read carefully the recipe. I will have to try again. Lesson learned Thank you Chef John.

If I were to use a frozen, ready made pie crust, should I still use the weights and pre-bake the crust? The peaches ended up at top of the pie. If were to. cut the pieces smaller, would they settle throughout the pie or still rise up to the top?

The peaches will rise to the top. If u use too many peaches your pie won’t set up firmly. Too much moisture from the peaches. You could always heat up some extra slices of peaches and brown sugar ( and spices if u want). Cook on the stove top and then chill this extra peachy goodness in the fridge while the pie cools down. Let the pie cool. Then it will be “set”. If baked correctly. If it isn’t set set and you cut a piece out. The rest of that custardy, hot pie will turn into runny goo in your pie pan. So just let it cool completely. The custard will firm up. It probably also does taste better cold. At least that’s my guess.

Chef John, my mom has been making this pie since the early '60's when she learned how to do it from her neighbor, the elderly Mrs. Billard, in Richmond, Virginia. However, she doesn't use corn meal. I can't imagine what kind of texture that would impart. Is it gritty? Or does it soften like polenta? Also, lemon juice is probably better than vinegar because it blends with the peach flavor better. Finally, Mrs. Billard used nutmeg also in the batter.
