I live near Baltimore, 51 ft above sea level. I cook my eggs soft 7 minutes from time of boil and then plunge them into an ice bath. I store them in the ice water in refrigerator until ready to eat. I use older eggs (close, but not at expiration), so they peel well.

I do love cooking for my family, most of them like hard boiled eggs and this recipe turned out perfect!! This is the only way I do them now. Great deviled eggs too

Nice method, Also you can put the egg in water, sprinkle salt all over it, and let it boil for about 30min. Run it under some cool water to let it cool off. That allows it to peel easy as well, that's what the salt does.

One thing I'd suggest is spinning the water so there's a tornado in the center before carefully dropping in the eggs. This helps the egg yolk stay in the center and is especially good if you're making soft boiled eggs like ramen eggs or something similar

Tap the widest side until you hear a cracking before putting them in the water. This separates the membrane which makes it easier to peel.

One awesome tip I saw in a Japanese Noodle video is to prick a small hole(you can do a small stab with a tooth pick or a knife tip) on the non pointy end of the egg(this side has the air pouch so egg won't seep through) you'll never see eggs break while boiling.
