If anyone is looking for the recipe she used, here it is: • 1 pinch of salt (or 1/4 teaspoon cream of tartar. You may also use 1/4 teaspoon lemon juice or 1/4 teaspoon vinegar - not as effective) • 4 egg whites (154 grams) • 250 grams of superfine sugar (or blend granulated sugar in a food processor for 30-60 seconds) • 1/2 teaspoon vanilla extract - optional *Tip:* if you'd like to adjust the recipe, make sure the egg to sugar ratio is about 50 grams per 1 egg *Crispy on outside, soft on inside:* Bake in oven at 150°C (300°F) for 25mins, then turn off oven and leave in oven to cool for 1 hour. *Evenly cooked & crispy throughout:* Bake in oven for 100°C (200°F), then leave in oven to cool for 1 hour.

I'm not sure if baking soda has the right acid, but if it has a significant amount of acid, then it probably will. I don't recommend it though, it will probably spread out the meringues.

Besides following these wonderful tips, just remember that it takes a bit of patience and practice. Many people get frustrated and either overwhip or don't whip enough and simply give up. Just be patient and practice, practice, practice following all of these tips.

its 1/4 cup sugar to each egg. if 3 eggs use 1/4th-1/3rd tsp tartar. after sugar is added (should take 7-10 minutes whisking it in) put tsp vanilla/lemon/raspberry extract. if its still grainy you continue to whisk until smooth between fingers. if you want the texture the way shes making it; 300f for 25 minutes shut oven off and keep in for 35 more minutes. do not open door during entire time. then crack oven and let cool. if you want them hard the whole way through; 200f for 1.5-2 hours shut oven off and crack door to let cool for about an hour. if you do not have parchment paper use aluminium foil, do not use wax paper

Btw if you dont have Tartar cream you can use same amounts of lemon or vinegar! Then it makes lemon meringue!

I made half batch of these with 2 egg whites and used dark vinegar instead of red wine vinegar and they turned out great! I did 200 degrees for 60 minutes and then left them in there for a another hour to cool. I made about 6 cookies.

I just made some meringues with little bits of crushed peanuts and a splash of vanilla extract, they turned out really yummy! I really love the idea of flavoring meringues and would like to experiment a bit, but I want to know what I can or can't add before trying things out so I don't ruin a perfectly good batch of meringue! Like for example, can I try adding coffee creamer to add some flavor? Or would it disrupt the mixture? And is it possible to add too much chopped nuts that it makes the egg mixture lose air?? What other flavor ideas do you guys suggest? All ideas are welcome! :)

It’s not easy too find caster/superfine sugar in bulk in the states. It’s sold in 12oz/340g containers which is never enough for more than one recipe. Can regular sugar be used and if so how does that scale? Can whirling granulated sugar through the food processor produce the same fine grind as caster sugar?

As for the acid, you can also simply use some lemon juice. Just keep in mind that it adds a bit of flavour. If you're making meringue that isn't going to be crispy, for something as lemon-meringue pie, then adding a bit of honey helps to hold the shape of the meringue longer.

I used two eggs, lemon juice instead of that tartar stuff because I have no idea what it is and 100gramm sugar. I got eight rather big ones and they are in the oven right now. they look so pretty! edit: okay, they are kinda marshmallowy in the middle but I think the temperature was too high, which indeed could just be my oven. they stuck to the paper and they are really fragile so yeah, next time lower temp and longer cooking time.

If you don't have cream of tartar you can just leave it out or you can add just pinch of salt... you can cover and store these for several days at room temperature.

Definitely don't use powdered sugar, normal sugar will still work, but might give you slightly grainy meringues. Here's a little tip - if you blitz normal sugar in a blender, you'll reduce the grain size, and it'll become caster sugar. Caster sugar is also called superfine sugar.

My problem with all the recipes presented all over the internet that require the usage of on oven, is that they do not say which program or setting should be used for that certain recipe. For example, I have an electric oven and for this recipe I have no idea if I should the option for heat coming from upward and downward or only up/down, or also choose a program that has the convection air on.

i used a dollar tree hand mixer and they turned out great, you really gotta make sure you use that cream of tartar if your hand whipping it, and you have to beat it until its thickening then add a little sugar and beat it for a while then add a little bit more then beat it again, it takes forever but in the end its worth it

Add a pinch of salt before whsking, it makes whisking faster by an order of magnitude. Not all that impressive if you have a stand mixer, but it’s a life saver when whisking by hand.

lifehacker123 Is there no room to put an in-wall oven? Not sure how much space you have. You can get a low end one for about 350-400 USD. You can also get high end toaster ovens which go on the counter for about 600 which can do baking, but are not good for casseroles or roasts.

Hello Jemma first of all thanks for the great recipe, it looks easy and delicious and i'll try it. I have 1 question, if i want to make a coffee flavoured one, can i add some instant coffee? But should i do it at the beginning or when the meringue is already stiff? Keep up the great work. ;-)
