INGREDIENTS:
2 large egg whites, room temperature
1/8 tsp cream of tartar
pinch of salt
1 tsp vanilla extract or paste
1/2 cup (100 gr) granulated sugar

Meringue cookies are possibly one of the easiest cookies to make. All you have to do is make a simple french meringue and pipe it and bake it at a low temperature until crisp and melt in your mouth.
You can add any flavoring you like, but I like to highlight a high quality vanilla extract or paste. The cookies are delicious all on their own, but are also a beautiful topping for a layer cake, or a decorated cream tart.

Good programme. Great information. Well and clearly narrated. Professional! One thing. Rather than putting one's hand on the parchment paper, dab a very small amount of the finished meringue under the parchment-- two in the centre, one under each corner, about 2 centimetres (about 1/2 inch or so) in. Use the underside of a metal teaspoon for this. Don't need much at all, perhaps 1/4 teaspoon of meringue in total, but more doesn't matter. Cleaner- easier to pipe using two hands on piping bag- and easy cleaning afterwards.

Thanks for responding to my meringue cookie comment, Baker Bettie. I think it very smart on your part to brand your appearance so that you're immediately recognised on KZbin. It's a crowded field, and you stand out. It's also brilliant of you to make space for viewer comments by-- very deliberately-- not performing a task perfectly, thus allowing follower's feedback. Like Scarlett trying on her bonnet backwards so that Rhett rushes to help her. On this note, about meringue dabs underneath parchment paper: when the parchment paper is in place, use a cloth or another clean item, and press down firmly on the meringue smears to make the paper adhere to the baking sheet. Really like your channel.

Oh. Baker Bettie, please try powdered vanilla in meringues and most other baking. The brand I use is Canadian, from a Health Food store, but I'm certain powdered vanilla in a dark glass jar is universal. It stores well in a cupboard, lasts for about a year, has no alcohol or liquid which makes it useful in almost any recipe, and the flavour is pronounced. The tiny specks look good, too. Question: what is d ideal speed (1-12) when frothing? while putting sugar in? and after putting all sugars? (1-12? speed) Also I have 2 large sheet/tray, only one can fit in 1 layer oven, should I put it in 2nd and 3rd rack from top? or 3rd and 4th rack? thanku

@@BakerBettie I did but not sure what went wrong. 1. Took forever to bake, 2. Would come out dried out from the oven but with exposure to air it turned into foamy sticky consistency 🙁 I will try your recipe next time

Yes you can! You want your chocolate to be warm enough to be pourable when you dip in the kisses but not piping hot.

Can you do tutorial for a meringue pie.. I don’t know what I do wrong but after cooling down the next day it starts to weep!! It’s extremely difficult to finish off a 24cm pie in one day!!

Kate and when you lift your whisk the peaks shouldn’t fall over if that makes sense. Once they are stiff don’t mix anymore
