Wow this video came out 1 hour ago, I just ate bao lol. Crab or pork is the best. Thank you for the video. I used to go to Nan Xiang Xiao Long Bao in flushing NY, before I found a hidden gem. Absolute best breakfast worldwide

Great video! Shanghainese people also call these Xiao Long Man Tou instead of Xiao Long Bao, because in Shanghai and also most of Southern China, Man Tou refers to a bun with filling inside and Bao is a bun without filling, whereas in Northern China it's vice versa. This is why it's called Xiao Long Man Tou in Shanghainese.

I don't think it's the opposite in north and south. In Shanghainese I only use the word mantou for all types of buns, filling and no filling. I just think there's no natural word that's the same as bao in Wu Chinese

the best way to eat xiolongbao for me is put it in the laddle break it open, drink the soup, add some black vinegar and a thin slice or two of ginger on top of the dumpling then eat it right away while it's still hot/warm.

i tried making ti and i was horrible at folding n the soup all spileld when i steamed it. i expected it so i put it in a plate when steaming. still had that delicious soup flavours :))

the filling and wrapper are simple enough but how do you get flavorful soup? i've seen recipes where they just use gelatin and canned broth but the flavor just isn't there.

Trust me, the wrapper is hardest part to get right. Thinning/tapering the wrapper outwards from the middle to allow more folds without the whole dumpling being thick is difficult. Good XLB is judged by wrapper.

Simple method to make aspic is using a box chicken soup with a package of gelatin boil it over a pot until gelatin dissolved into the broth. Put the cooked soup into the refrigerator to cool down for couple hours to form jello.
