INGREDIENTS
PESTO 1:
2 cups fresh basil leaves, packed
1/2 cup freshly grated Romano or Parmesan-Reggiano cheese (about 2 ounces)
1/2 cup extra virgin olive oil
1/3 cup pine nuts
3 garlic cloves, minced (about 3 teaspoons)
1/4 teaspoon salt, more to taste
1/8 teaspoon freshly ground black pepper, more to taste
PESTO 2:
1 cup fresh basil leaves, packed
1 cup fresh parsley, packed
1/2 cup freshly grated Romano or Parmesan-Reggiano cheese (about 2 ounces)
1/2 cup extra virgin olive oil
1/3 cup pine nuts
1/3 cup sun dried tomatoes
3 garlic cloves, minced (about 3 teaspoons)
1/4 teaspoon salt, more to taste
1/8 teaspoon freshly ground black pepper, more to taste
PESTO 3:
2 cups fresh arugula, packed
1/2 cup freshly grated Romano or Parmesan-Reggiano cheese (about 2 ounces)
1/2 cup extra virgin olive oil
1/3 cup walnuts
3 garlic cloves, minced (about 3 teaspoons)
1/4 teaspoon salt, more to taste
1/8 teaspoon freshly ground black pepper, more to taste
1. Pulse leaves and nuts in a food processor: Place the leaves and nuts into the bowl of a food processor and pulse a several times.
2. Add the garlic and cheese: Add the garlic and Parmesan or Romano cheese and pulse several times more. Scrape down the sides of the food processor with a rubber spatula.
3. Stream in the olive oil: While the food processor is running, slowly add the olive oil in a steady small stream. Adding the olive oil slowly, while the processor is running, will help it emulsify and help keep the olive oil from separating. Occasionally stop to scrape down the sides of the food processor.
4. Stir in salt and freshly ground black pepper, add more to taste.

I like to add some fresh squeezed lemon juice & kosher salt. I also toast the nuts in a dry pan first. Brings out the natural oils. Delish!

Made the first recipe, used cashews instead of pine nuts (don't have access to pine nuts today) it is delicious!! Highly recommend

I took pesto, 2 whole oven roasted with olive oil, and just tomato paste, I oven roasted chicken breast, and made pasta, I just put the pasta on the plate, put the tomato paste on it and squeeze out the whole garlic cloves on it , stirred it put some 1/3 of it on top of the chicken breast other 2/3 rds on top of the spaghetti, it was WONDERFUL.

The main flavor of all these pestos is the sharp Romano which can't be left out. Does anyone have a suggestion for a vegan substitute that will have the same sharpness and close to the same flavor as the Romano?

I know that Morgan, the co-founder of Primal Kitchen, has a pesto recipe using almonds which is actually what the recipe for our frozen Chicken Pesto Bowl is based off of. So yeah, you could try almonds. I should do a video on that...

I know you eat everyday. There are some channels that post three times a day. So where are your videos? I finally find a person who cuts through the chase gets it done but you don't post.
