I have binge watched several of your videos today and yesterday. Okay this will be like the third time I'm watching, lol. The first time was fascination, the last two times was to write the method and ingredients down for each recipe. I'm not going to lie, when you claimed to do vegan fine-dining I thought this was going to be pretentious and not something that many would want to eat. There are few vegan cooks/chef that have approachable personalities and make the ingredients & methods user-friendly. You do this! And to address what I said earlier about thinking the fine-dining was going to be average? Not at all! Completely above average---truth here. Genuine fine-dining with southern flair is what you brought to the table. This is the kind of vegan food that most gentlemen and lady's alike wouldn't mind switching to or having as a substitute for a "meat meal" from time to time. And nothing against oil-free vegans because some have some great recipes, but yours are more like everyday home cooking. For many of us, doing away with oil isn't realistic or we're just not ready (and may never!). This is an excellent Bolognese video. Please keep the material coming. I love that you don't use seitan for everything. You give options. There are thousands of seitan videos but not enough with actual vegetable substitutes these days. Even if you do use seitan, I will watch and love, I'm sure, lol. I have a few requests: Meatloaf, burgers and a few desserts *your* way. Also shrimp substitute that isn't necessarily prepackaged/store-bought? If you know of one, please share. It's so hard to find, where I am. You deserve so many more viewers and views. What an exciting and real channel. Thanks for letting us into your home and showing us the ways. God bless you and yours 😎. P.S. Dang, I wrote a book!

Great channel! One thing, the base of traditional Ragu' alla Bolognese (Bo Lo n~ay zay) is with onions, celery and carrots. Then you add minced meat (vegan is also perfect), a little red wine, a little tomato sauce, salt, black pepper and clovers. No basil, no parsley, no mushrooms. Love from Italy ❤️

I’ll never forget one time my grandma’s neighbor asked to borrow some canned sauce and tomato paste for a dinner we were invited to an hour later. I never heard the end of it. “How can they make sauce in an hour?!? I don’t wanna be rude but i can’t eat that!” She was a trip!
