So I just got done making bao from scratch, braising a pork shoulder for 5 hours, and prepping a bunch of veggies. I knew I wanted a pork bun, but I had no idea how to go about making one with all these ingredients. Good thing I found this video detailing how to heat up leftover pork and assemble a fucking sandwich. I don't think I would have been able to figure that part out on my own.

Why does he say 'caramelized' when talking about the frying of the buns and pork, when he's not using any sugar?
@DaniellaTello
@DaniellaTello 9 жыл бұрын
Theres probably some type of sugar in the buns. Just like you caramelise meat or onions even though you dont add any extra sugar
@TheMrNefarious
@TheMrNefarious 9 жыл бұрын
Daniella Tello Not enough Sugar to call it a caramelization. This chef does not know WTF he's talking about.
@anpi007
@anpi007 9 жыл бұрын
Ok so I looked into it, and it seems like the chef knows exactly what he's talking about. According to Wikipedia, bread or meat can be caramelized due to a proces called the Maillard reaction. The higher the temperature, the faster this reaction occurs, hence that hot pan and frying oil. It has something to do with the sugars that are present in the surface that react with amino acids. Seared steaks, pan-fried dumplings are given as an example of the usage of this technique, so there you have it :).
